Wedding Woes

I hope I don't regret it

SIL's rehearsal is at gmil's house.  Everyone has had their rehearsal there and so SIL decided to go with a planned formula and stick with tradition.

MIL is planning the whole thing, food, decorations, etc.  She was going to just buy a cake from somewhere and I said to H, ::nosewrinkle:: "I'll just make something".

It's for 40-45 people.  The weekend immediately before the rehearsal dinner H is going to be gone, so I'll have the whole house to myself.  I don't think it'll be a problem, but I'd better clean out my freezer for room.

So...any ideas?

  • what about pies or cheesecakes rather than a regular cake?

*i'm not a huge fan of regular cake, and having it as the only dessert option for 2 days in a row would suck a little - i realize that most people probably don't share this opinion.
  • I'm pretty open to anything.  Cakes, pies, cheesecake, candy, cookies.  Anything.  I have time to plan and prepare.

Thoughts a couple of cheesecakes with different toppings.  Cookies.  Ice cream sundaes- prescoop and put in the little clear plastic cups and use the press and seal stuff.

Best cake tips- Before baking grease and flour then put a layer of waxed paper in the bottom.  As soon as the cake comes out put a layer of waxed paper on top and wrap, wrap, wrap with saran wrap.  Then put it straight into the freezer.  All of the moisture gets sucked back in.  This works with cupcakes too.
  • I made those Paula Deen mini-cheesecake tarlet thingies and they were a hit. I recommend those. Easy peasy.

  • Thanks for all the suggestions.  I will start a list and revise.  :)
