Which vendors in Denver feed you ENOUGH?!?

I have a family that is BIG on food, does anyone have a vendor they have used that provided more than enough food for over 150 people?  My brothers will start an "IHOP after?" conversation if they aren't fed enough, and even though my fiance and I are planning to have everything buffet style, I fear the "fufu" caterers that our wedding venue "strongly recommends" (read pushes on you) will underfeed and I'll never hear the end of the baby food served at our wedding.  

Our venue is The Chateaux at Fox Meadows, and our recommended caterers are: The Food Guy; Gourmet Fine; A Spice of Life; Heart's Desire; Greenspoint; and The Black Eyed Pea.

I would appreciate all the help you can give!

    Hi Wade.....check out "A Wwild Thyme Catering and Events".  They have a great website and good eats.  They also provide decorations, linens, decor etc at no cost.   They specialize in parties of 250 or less and have a huuuuuuuge menu to choose from.  Good Luck!!!!
