Tasty Tuesday

Hi everyone! Taking over this spot for romamor4 so please have patience with me!
First I want to give a big shout out to Cassi for doing such a wonderfull job and some quick T&P's that things work out well for you!!!

Ok so to get it started today, lets talk PARTY...... mainly as in APPETIZERS!!!
With all the wedding planning and soon to be showers everyone can appreciate a quick to fix "go to" appetizer. You know what I mean the one you whip up at the last minute because you forgeot about the work pitch in, or the last minute party you decided to throw! Share those reciepes ladies, we all need to have more time for the important things... like WEDDINGS!

Here is my favorite "quick fix" I try and keep these ingredients in the house at all times. I can have this ready for the table in less the 10 minutes!

1 small tub of salsa flavored cream cheese
1 jar of old english cheese spread
a pinch of onion powder
a pinch of garlic powder

Mix all ingredients togther well and put in a pretty bowl
Serve with any of the following, bagels, chips, doritos, pretzels, or crackers

OK ladies lets hear what you've got!!

Re: Tasty Tuesday

  • For summer:

My favorite gluten free/ vegan/ low cal/ deliciously easy appetizer is to spear watermelon cubes with fresh mint leaves on a toothpick and put on a tray.

Alternately, little skeweres of a cube of feta, a cube of watermelon and a basil leaf (vegetarian and gf too!)

To impress the pants off of people, I love stuffing dried dates or figs with goat cheese mixed with just a touch of pine nuts and then wrapping in proscuitto.

When in doubt: I buy a tub of hummus at the grocery store and add pita bread and carrot chips on the side then put the hummus in a nice bowl with some type of decoration (lemon twist/ pine nuts/ dusting of paprika/ drizzle of olive oil) on top so people think I made it.

  • I like to make pigs in a blanket, I think it's so easy! And I use the 98% fat free turkey dogs and the reduced fat croissants, so it's something I don't feel bad eating some of too!

  • Deviled eggs! Who doesn't love these? Not saying they are healthy, but I almost always have eggs in the house and the rest of the ingredients are condiments in your fridge. Boil eggs, peel and take out yokes. Mix yokes with a big dolop of spicy mustard, a spalsh of vinegar, and enough mayo to get the consistency right. Add salt, pepper, chili powder, whatever you want. Finish with paprika! My secret is the spicy mustard more is better bc than you can cut down on the mayo.

  • Always Buffalo Chicken Dip.  That dip has wooed even the toughest critics, and has single handedly converted me from a spicy-averse, meat-on-the-bone-averse eater to a buffalo chicken wing addict.

    2 containers Philadelphia cream cheese
1 cup chunky blue cheese dressing
Frank's Buffalo Hot Sauce (to taste - I use probably close to 1 cup)
Shredded chicken (either canned chicken, or cut up leftover grilled or rotisserie chicken)
    Sharp cheddar cheese, shredded

Combine cream cheese, blue cheese dressing, and hot sauce to taste.  Stir in chicken.  Spread into dip container (recommend pie dish for maximum cheese-covering space).  Top heavily with cheddar cheese.  Do not fill to top - will bubble and overflow!  Place on tin foiled pan, put in oven at 450 degrees F until cheese turns slightly brown.  Let cool and serve with Frito Scoops or tortilla chips.

    YUM!
