Cake Top Layer Question

To freeze or not to freeze-- that is the question. My worry is that it will be disgustingly gross and maybe the better idea is to just order the same cake from the bakery next year and actually have it taste good. This way we can enjoy our cake now since we didnt get a chance to really enjoy it at the wedding

We froze a slice and figured we'd just order the cake again, we can try the slice and if it sucks, just dig into the fresh cake.

The way our bakery did it was that the top layer was "free" (i.e. those slices didn't add into our final count) so that we could take it home and freeze it. We kind of felt the same way you did about freezing it for a year (I'm sorry, that's just gross) and instead just asked to pay up front for the top layer to be sliced and served at the wedding, and they gave us a gift certificate for ordering a cake next year the same size and such. They wrote down our favorite flavor, too, so we wouldn't forget once our anniversary comes around. It seemed like a happy alternative. HTH!

Our bakery made us a mini cake to freeze, which is cute, but I am not looking forward to eating it...

Our family is really into it...which is probably the only reason it is in the freezer right now.

I didnt even care about saving my top tier. But I guess my Mother In Law packed it up in a little box and then it ended up in our freezer. LOL so we'll see how it is in a year. If its bad I'll just order a little cake from the bakery for us for our anniversary.

We ate the top layer with out families the next day. I had told the venue I wanted it served but they wrapped it up anyway. SO we ate it. It was good, too.

I saved a slice of the cake. I had the top part in fridge for a week before I got around to doing anything with it. By then, the buttercream didn't taste so good and the cake was a little dried out. I felt bad for throwing it out, but H didn't like that flavor anyway. But I'm stupidly sentimental sometimes, so I saved a slice and stuck in the freezer. I'm sure it will taste pretty gross. Hopefully we will go back next year for our anniversary and I'll surprise order a small cake in the flavor he liked.

Our friends froze their cake and ate it on their one month anniversary, because they didn't want a freezer burned nasty soggy cake in a year. I think we might do this.

We froze ours and plan to eat it next year.

*Just a note (since this is not my first wedding), my late husband and I did this and it wasn’t as bad as you expect. We wrapped the cake in cling wrap and also put it in a freezer container and there wasn’t freezer burn on it. It just wasn’t as pretty as the wedding day. lol

Our baker provides us with a 1st anniversary cake that replicates the top layer of the wedding cake, so no need to freeze.

I'm 110% expecting ours to be gross, but who cares, that's the tradition! I don't get why people order a new cake....it's not really your wedding cake then, and isn't that the point! I don't think it's about the cake, but more about the tradition. But that's my opinion.....

PS - We had 3 flavors and they only served us 2 at the wedding, so they gave us a few slives of the third to bring home. We went on our HM right away and didn't want it to go bad so we put it in the freezer right away and it was totally fine when we came back. No, it's wasn't fresh baked, but it wasn't soggy or anything and still tasted pretty good. It won't be soggy if you get it in there right away and don't let it defrost before you eat it - even after a year.

My husband is strange about things in the freezer or refrigerator which he deems too long (which is one day past the expiration date for refrigerator and one month in the freezer). It annoys me to no end, but I didn't think the anniversary cake was worth the battle. So, it is not in our freezer, but our baker will bake us a cake for our year anniversary, so we'll get that if we think about it! I hope we remember, I loved our cake!

I've heard it tastes gross, and we didn't really care about doing it, so I just gave ours to my parents/brother so that they could enjoy it (we were leaving for our honeymoon).

We cut our top layer into 12 slices and wrapped each individually in saran wrap, then in foil and put them all in the freezer. We are going to eat one every month on the 19th (we got married on May 19th) until we eat the last one on our first year anniversary. At least this way if it gets gross the older it gets, we will get to enjoy how it tastes for the first few months

We ended up waiting till last night to cut it up (1 week anniversary) and I wrapped 2 slices in syran wrap and foil and into a freezer bag for our 1 year anniversary. We put it in the fridge as soon as we got home the day after the wedding. It still tasted very good and we plan on going back to the same South Philly Italian bakery for our 1 year anniversary and any reason for cakes for now on!
