August 2012 Weddings

what are your passed horderves?

I need to pick 4 horderves that will be passed during cocktail hour.
Im not sure what "type" i should pick. Like 2 carbs 2 meats? a fish a chicken a meat and a carb? for dinner we are having buffet, lobster steak and chicken, potatos, veggies. Clams mussels and salad will be plated. (its like a indoor clam bake kinda)

Im clearly over thinking this but just was wondering what you ladys were doing

Re: what are your passed horderves?

  • We are having a yummy sounding brie and pastry thing (with a very fancy name), shrimp cocktail, a tapenade pastry thing (also with an extremely fancy name), Swedish meatballs (I'm part Swedish), and spinach and feta stuffed mushrooms. We are debating between adding crab cakes or a fruit platter.

We have quite a few vegetarian friends, and several who don't eat red meat, so we made sure to have vegetarian options. The plated dinners are either steak or a vegetarian risotto, which made us decide against having beefy appetizers. We would have added a chicken appetizer, but the ones available at our venue didn't sound all that great.

I am so excited! I hope that I get a chance to try everything.

  • We also aren't doing passed appetizers. We will haven't decided for sure, but we will probably do a fruit and veggie trays along with a few other meat and bread options.
  • we're doing a cold Mini Bruchetta, Smoked Salmon with Dill Creme Fraiche, House Smoked Duck Breast with Apricot Chutney on Crostini and Fresh Maine Lobster Cakes with Chive Aioli.

As a vegetarian, I truly appreciate when there are at least one or two appetizers I can eat, though I understand why some people may not want to choose that. We tried to hit a variety of foods so there would be something for everyone.
  • mini mac-n-cheese
toast point with dill cream cheese and shrimp
    pot stickers
    caprese skewers

  • We are just going to buy some snack items at Sam's Club to put out. However, as a wedding guest, when appetizers are served, I have to say my favorites are: stuffed mushrooms, crab cakes, & those beef chunks wrapped in bacon!

Thanks ladies! Lots of great ideas.. it all sounds great. Of course we didnt get to picking out the apps last night but tonight i hope to get it done!
  • I second lclemence, I would try to have at least one of the passed hor d'oeuvres be a vegetarian item. We're having stuffed mushrooms, mini crab cakes, tandoori shrimp, and chicken satay skewers. Our mains are salmon and steak (pasta for vegetarians) so we tried to pick different things for the hor d'oeuvres.

We hadn't thought about that at first, but we have at least five people requesting vegetarian meals so far, so I'm glad one of ours ended up being veggie-friendly.
