I just found out my class was cancelled tonight, so I now can do more than just reheat dinner.
Any suggestions for what I should make? You girls are always so good with recipes! I have some chicken breast that needs to be used, so let's start with that.
Also, what's your favorite food for leftovers? We're approaching BF's finals and I'd like to have some food that he can just reheat so he shove a few bites in his mouth so he doesn't starve while buried in his books.

I also like chili for leftovers. Very easy to heat up on the go.
I kind of just make it up as I go.. but here is kind of how I do it;
-Brown chicken in extra virgin olive oil and season with salt/pepper and garlic salt, while that is browning sautee (in seperate pan) chopped onion and garlic in evoo. (love rachel ray) Add chopped celery, red or green bell peppers and brocolli.
-When chicken is browned add to veggies and let simmer together.
-Add a splash (i like a BIG splash) of hot chili oil, and soy sauce. It will probably be pretty liquidy so add a little cornstarch to thicken up.
-Add water chestnuts and peanuts right before taking off heat.
Put over brown rice and its soo good! one of my favorites. Its easier to make than it looks and it is good for left-overs
I am making home-made chicken pot pie tonight.. first time so I am a little nervous!
I don't have the recipe handy, but you mix butter, buttermilk, flour and oregano to make the sauce. Then stir in pre-cooked carrots, peas, and pearl onions. (Oh and add cubed chicken, too. I'm used to my veggie version.)
Separately, make biscuits and cook them halfway. We usually use the Pillsbury buttermilk biscuits.
Pour the veggie/chicken/sauce mixture into a casserole dish. Top with the half-baked biscuits and bake at 350 until the biscuits are golden.
I'm sure it isn't healthy because of the buttermilk, but it is so good!

It calls for turkey, but I've used chicken and it's just as delicious. Basically, it's a creamy pasta bake with chicken +/- veggies. Yum!
Hmm... maybe something like the stirfry? I've got some teriyaki sauce, too!
Or boil chicken in chicken broth. Then add a bunch of different veggies, whatever you have on hand. Season with salt, pepp, garlic salt, and basil with a couple cups of water. After that is all cooked stir in cooked rice or pasta! Voila! Chicken and veggie rice soup! (or chicken and veggie pasta soup!)
It will now be chicken enchiladas and gazpacho.

I usually serve these with baked fries - just cut the potatoes (skin and all) into wedges, coat with 1/2-1 tbsp oil per potato and whatever seasoning you want (we like Mrs. Dash either original or chipotle) and mix it up - plop it on the cookie sheet and bake at 400 for 28-30 minutes, stirring halfway through.
Easy leftover is one I had tonight. FI loves Salisbury Steak, so I try to keep a family-sized box in the freezer. Any leftovers (which don't happen very often with my FI) I freeze individually in ziploc bags with some of the gravy. Don't thaw before reheating, just take it straight from the freezer and peel the bag off (this way you won't lose any of the gravy and make a mess) - put it in the microwave (don't forget to cover it with wax paper) for 2 1/2-3 min, stirring halfway through. While it's heating up, fix some potatoes or rice to serve with it and you've got a simple, yet very filling, and quick meal, esp good on a cool evening.
