Let's talk about breakfast

I'm getting bored with my usual go-tos, so let's hear what you have.  Bonus points if they're gluten free!

Mine:
Van's GF waffles with peanut butter and strawberries and a drizzle of raw honey
Banana and peanut butter
Apple and cheese
Smoothie with berries, spinach, OJ, greek yogurt, honey, and ice
Greek yogurt

  • *2 Egg Muffins. I make them with a little bit of cheese and real bacon bits (Not that bacon's the greatest thing for me, but I really don't use that much). I keep forgetting to thank Anna for posting about the egg muffins a few weeks ago (Thank you, Anna!), because I had never heard of them before and they are awesome!

    *Green monster smoothie with flax seeds, tons of ice and any combination of strawberries, blueberries and pineapple. I use either Vanilla Coconut Silk or Pomegranate juice for my liquid, and sometimes I'll dump a bit of carrot juice in there as well.

    *Cinnamon Oatmeal with a snack box of Craisons and some almonds. It's pretty much "trail mix soup", lol ... and it's delicious!

    *A serving of whatever Kashi cereal I happen to have in the house.


    I usually rotate any combination of these throughout the week. I have a 9-5 job, but my lunch hour isn't until 2pm, so at around 11 I'll also have a snack of Vanilla Greek yogurt, or some string cheese with baby carrots or some fruit.

    Oooh, I have to try throwing some bell pepper in next time! That sounds so yummy!

    <div>They've also changed DH's life because he seriously never used to never eat breakfast (Insisting he didn't have time) ... and usually would skip lunch (Also "no time") ... and pretty much eat 700+ calories for dinner because he didn't eat anything all day (Which is a 10-hour shift that he's mostly non-stop on his feet for). I  started making these for myself and when he got curious, I explained "2 minutes in the microwave, and BAM! Breakfast you have time for", and he's been eating breakfast regularly ever since. I guess eating breakfast triggered his body into wanting food more than once a day, but it's prompted him to start making time for quick lunches (Even if it's just wolfing down a quick sandwich or something), and he's been easing off on completely gorging at dinner.

    I don't care why it happened, I'm just glad he's eating more than once a day now, lol.

    See, I totally did not think those egg muffins were that good.  But I'm super picky about my eggs, so that's probably why.

    I AM a heathen.  Let's remember that I don't like pancakes, bacon, or cake either.  Heathen for sure.

    I am bad :(
    I finally got myself to start eating breakfast..I'm one of those people that just aren't very hungry in the morning plus I have to get up really early and breakfast just didn't really happen. I've been doing greek yogurt though (which was pretty signifcant because I HATED the stuff 3 months ago) and I'll usually do a Nature Valley protein bar an hour or 2 later. Not great, but a start.

    Weekends are better usually :) FI and I have been making some nom nom stuff and I like my fresh fruit!

  • I am also usually not super hungry for breakfast either and everything I eat is pretty lame. I generally eat one of the following:

    Special K Cereal
    Banana with Peanut Butter
    Dannon light and fit yogurt
    Fiber one bar

    I need to start liking greek yogurt. Everytime I try it though, I like it more than the previous time. I also love all the cute little egg/breakfast cups on pinterest, but that would for sure have to be a weekend breakfast idea for me, I dont have a lot of time in the morning.

  • if you want some great easy recipes, check out the cook book Hungry Girl 300 recipes under 300 calories.  There are a TON of breakfast recipes like egg cups, and awesome oatmeal (like smores flavored)  Definitely worth checking out!

The egg recipes can be made in 5 minutes, but the oatmeal may take a bit longer like 20 minutes.

  • My breakfasts are very boring as well.  I usually have a bowl of plain oatmeal and I cut up some fresh strawberries (when they are in season) to sweeten it up.  Slow burning carbs.
