  Really depends on your budget. Lake George has lots of different places. The Sagamore is beautiful

  I got married at Silver Bay.  I loved it there and the fall foliage was amazing.  But they have raised their prices a lot since I got married so I don't know how they are relative to other options around there.  I also looked into the Lodge on Lake Clear which seemed really nice but was too small for my wedding.  (http://www.lodgeonlakeclear.com/weddings.html)

  The Hall of Springs in Saratoga has a gorgeous ballroom and it is located in a state park that has truly beautiful palces for foliage for pictures.

  The Gideon Putnam Hotel has a room called the Arches, with floor to ceiling windows and views of the state park.

  The Crossings in Colonie is beautiful.  They have a few different areas to have the ceremony in the park.  There is also an indoor room that is nice.

  You might try Crystal Cove in Averill Park NY.  It is on Crystal Lake. Very outdoors and very casual.  Real good food.

  How far away are you looking to go? There are a few beautiful places in the Catskill area that offer the foiliage... check out Mohonk Mountain House, Honor's Haven Resort & Spa, Hudson Valley Resort & Spa or Villa Roma- they all have overnight rooms too so you make it into a weekend getaway.
