  • My FI loves banana bread so I am going to be making him some from scratch banana bread for valentines day tomorrow. I have never made it from scratch so I am eager on how it turns out. It is also a healthy recipe calling for yogurt and fewer eggs. I will let everyone know how it turns out before I pass the recipe along.

    I love cooking and baking it is my passion. My FI is lucky that he found someone who knows how to cook...

FI loved it, and it was pretty amazing, if I do say so myself! =) It was my first real meal I've made before. It was pretty easy, but it took me forever since I'm not very good in the kitchen.

  • caslisel- have you tried banana cookies?
    I found a recipe for them somewhere (i think i just googled it) and made them, they were super yum, but a lot like banana bread, lol. They are like banana bread cookies. FI really liked them since he loooooves soft cookes. I'm more of a crunchy/chewy cookie girl. The cookies aren't totally healthy, I think they have butter and eggs and other not-so good for you stuff, but worth a try!
    also, for those of you watching your calories, try a box of cake mix (and kind, but I like chocolate and spice cake) with a can (regular size, not the large) of pumpkin and 1/2 to 1 cup of water. bake it a little longer than the box time, but at the same temperature. SUPER easy, and cuts your calories and fat by almost 2/3! i do, however, reccomend doing some kind of sauce or icing for the chocolate, although you CANNOT taste the pumpkin, I like my chocolate cake to be chocolaty, so I made a sauce to go with. it was so moist and rich, I could only have a few bites!

  • I just made a fantastic chocolate pudding cake (the top is like a brownie and the bottom is a gooey chocolate pudding) for my youngest bro's b-day this past weekend. I got the recipe from a friend, and made it vegan by replacing the milk with soy milk:

    1 cup flour
    3/4 cup sugar
    2 tbsp cocoa
    2 tsp baking powder
    1/4 tsp salt
    1/2 cup milk
    2 tbsp cooking oil
    1 tsp vanilla
    3/4 cup brown sugar
    1/4 cup cocoa
    1 1/2 cups boiling water

    1. Preheat oven to 350 F. Grease 8x8 dish. Stir flour, sugar, 2 tbsp cocoa powder, baking powder and salt. Stir in milk, oil, and vanilla. 
    2. Pour batter into greased pan. In a small bowl, stir together brown sugar and 1/4 cup cocoa powder. Stir in the boiling water. Slowly pour over the batter.
    3. Bake for 40 min. Set on a wire rack and cool for 45-60 min. Serve warm. Spoon the brownie part into a bowl and then some of the pudding over top. Serve with ice cream.

    It was super easy and turned out really well!
