NWR: Crock Pot

I always amazed at how easy and how yummy things are when I use my crock pot. For example, I put some pork chops with 1/2 packet of dry Italian seasoning, corn and mushrooms and it is great!!

  • I make Ropa Vieja in a crock pot. Its like a Puerto Rican Stew that FI loves, but I hate how much effort it takes. It comes out amazing and requires so much less work!

  • Stuffed peppers are probably my favorite.  Barbeque is pretty great too, the meat gets so tender and juicy!

  • I LOOOVE my crockpot. My favorite thing to make is usually some type of soup or stew. My favorite so far has been a chicken and corn chowder. Yum!

  • I love my crock pot!! its the only real cooking I do haha.... my fave is pulled pork! tons of BBQ sauce & blue covered stuff (as my family calls it haha, I think its really called Seasonal?)

    And now I need to make this baked oatmeal since I hate eating breakfast and this might help. Do you use the same amount of apple sauce as she used butter? And do you ever add nuts?

    Recipe please!

    I use my crockpot to make chicken tortilla soup, split pea soup, pork and sourkraut, pot roast, BBQ pulled pork... the list goes on. There is nothing I love more than coming home at night to dinner already cooked.

    Its from FIs grandma, that I adapted to make in a crock pot.

    Ingredients:
    2 lb Flank Steak or Beef Roast
    1 small onion, chopped
    1 green pepper, chopped\
    1 Tbs. capers
    2 Tbs. EVOO
    1 package of Sazon (its sold in an orange box with packets inside from Goya)
    1 tsp. salt
    1 tsp. pepper
    1 tsp. garlic salt
    1 tsp. adobo seasoning (I use Goya for chicken, since its what I have)
    1 tsp. cayanne pepper
    1 small can tomato sauce
    1.5 cans of water
    2 large potatoes, chopped
    Carrots, chopped

    Mix tomato sauce, water, oil and dry seasonings together. Put steak, peppers & onions in the bottom of the crock pot. Pour the liquid over and cook on Low for 8 hours (or High for 4).

    Shred the beef; add in the carrots and potatoes and cook on high for 1-2 hours.

    I serve it with brown rice, and usually add hot sauce since I have burnt out my pallet.

  • I actually have a beef roast with potatoes and carrots cooking in the Crock-pot right now - makes the house smell amazing!  Chicken fajitas, cheesy potatoes, and buffalo chicken dip are some of our other favorites besides good old beef.
