Recipes Please

We're looking for some new healthy recipes.  FI's son is the biggest PITA when it comes to what he'll eat. 

I made this tonight:

1 can of fat free refried beans
1 can of no sodium corn drained
1 can of diced tomato with chilis
8 oz of no sodium chicken broth
8 oz of no sodium beef broth
ground meat (I used chicken/beef mix)  amount unknown.  My scale broke.
taco seasoning

brown meat.  mix everything together and heat through. 

I told him it was chili soup and not taco soup so he would eat it.

  • Healthy Baked Chicken Nuggets

    Servings:
    4 • Serving Size: 1/4th of nuggets
    Calories:

    • 16 oz (2 large) skinless boneless chicken breasts, cut into even bit sized pieces
    • salt and pepper to taste
    • 2 tsp olive oil
    • 6 tbsp whole wheat Italian seasoned breadcrumbs
    • 2 tbsp panko
    • 2 tbsp grated parmesan cheese
    • olive oil spray

    Preheat
    oven to 425°. Spray a baking sheet with olive oil spray.

    Put
    the olive oil in one bowl and the breadcrumbs, panko and parmesan cheese in another.

    Season
    chicken with salt and pepper, then put in the bowl with the olive oil and mix well so the olive oil evenly coats all of the chicken.

    Put
    a few chunks of chicken at a time into the breadcrumb mixture to coat, then on the baking sheet. Lightly spray the top with olive oil spray then bake 8 - 10 minutes. Turn over then cook another 4 - 5 minutes or until cooked though


    When I make these, I actually need more OO to dip fyi... and I sometimes run out of breadcrumbs so have to add more of that too

    I have a recipe for baked mozzarella sticks too if you were interested. About 45 calories per stick.

  • Skinny Baked Mozzarella Sticks
    Servings:
    12 • Serving Size: 2 pieces

    Ingredients:


    • 12 sticks part-skim, reduced sodium mozzarella string cheese (Sargento)
    • 1 large egg, beaten
    • 2 tbsp flour
    • 5 tbsp Italian seasoned breadcrumbs
    • 5 tbsp panko crumbs
    • 2 tsp parmesan cheese
    • 1 tbsp dried parsley
    • olive oil cooking spray (I used my misto)

    Directions:

    Cut
    cheese in half to give you 24 pieces. Place cheese in the freezer until cheese is frozen.

    In small bowl,
    whisk the egg. Place the flour on another small dish. In separate bowl, combine bread crumbs, panko, parmesan cheese and dried parsley.

    Dip
    the frozen sticks in flour, shaking off excess, then into the egg, then coat with the crumbs.

    Repeat
    this process with the remaining cheese placing them on a tray with wax paper. Place cheese back into the freezer until ready to bake (this is a must or they will melt before the crumbs get golden).

    When ready to bake
    preheat oven to 400° F. Line a baking sheet with aluminum foil and lightly spray with oil.

    Place frozen cheese sticks on baking sheet.
    Spray the tops of the mozzarella sticks with a little more oil and bake in the bottom third of your oven until crisp, about 4 to 5 minutes. Turn and bake an additional 4 - 5 minutes watching them closely so they don't melt.

    I have a whole board on Pinterest of healthy recipes and most of them are from there. The Crock Pot Sante Fe Chicken is particularly good.

  • Mushroom Cap Pizza: a gluten-free/low-carb pizza option (you won't
    even miss the bread...this coming from a crust-lover)

    2 large or 3-4 small portabello mushroom caps per person
    Pizza Sauce
    Cheese
    Desired toppings

    Preheat oven to 400 degrees
    Wash and scoop out inside of mushroom caps.
    Bake mushroom caps at 400 degrees for 7 minutes
    Remove caps and put sauce on the caps.  Cover with cheese and add
    desired toppings (veggies, meat, whatever)
    Broil caps until cheese melts and starts to brown.
