Recipe Swap for the Holidays!

Hey ladies- I thought it was fun to read through all th eresponses to Vanessa's post about the pot luck. So I thought maybe we could have a recipe share. My idea is to post 1 quick recipe that is easy to whip up for stuff like work parties or cocktail parties. And one traditional dish you have during the holidays!

Here are mine:

Quick LF Spinach Artichoke Dip:
I typically make a LF app when I go to parties, so I know I can munch on it without the guilt :)

10 oz frozen spinach, thawed and separated
  • 1 can artichoke hears packed in water (drained, and chopped in food processor)
  • 1/2 cup light sour cream
  • 5 tbsp light mayo (i like to use the one with olive oil)
  • 1/3 cup high quality parmigian regganio
  • 1/4 cup chopped scallions
  • 1 clove garlic 
  • 1 cup shredded, part skim motzerella
  • dash of salt
  • pepper to taste
 
-Combine ALL indredients into a medium size baking dish. Bake at 375 for 25 minutes. So quick and deslic! You can top it with 1 cup panko crumbs mixed with 2tsps  olive oil for a topping if desired.


For Christmas Eve in my family we do the feast of the seven fishes (this has been switched to the "seven dishes" in my family because my fiance and aunt don't eat fish- so we end up with 5-6 fish dishes and a supplemental dish for them)

This year I am making these:

Mascarpone and Crab Stuffed Mushrooms
  • 12 large white mushroom caps (remove stems)
  • 8 oz crab meat (lump)
  • 8 oz mascarpone cheese
  • 1 egg
  • 1 cup bread crumbs
  • 1/4 cup parsley (use fresh), chopped
  • 1 lemon
  • sea salt
  • pepper (to taste)
  • 2 tbsp unsalted butter
In a bowl mix: crab meat, cheese, egg, 1/2 cup bread crumbs, 3 tbsp parslep, season with salt and pepper.
In a separte bowl combine the rest of the bread crumbs, parsley, and butter. Mix together lightly. 
Place the mushrooms caps tops down into a ungreased baking pan and fill with crab mixture. Sprinkly the bread crumb mixture on top.

Bake 25 minutes until bread crumbs are golden brown.
Squeeze a lemon lightly over all the mushrooms.

This is really easy recipe to double or triple (I usually make about 36)

    Here is my recipe

    Hot Wing Dip
    2 packs of Philadelphia Cream Cheese, room temperature
    1 cup Ranch dressing
    1 cup Frank's Hot Wing Sauce
    4 cups monterey jack cheese ( A bag usually has 2 cups in it.
    9X13 glass pan
    2-10 ounce cans of chicken, drained


    Spray Pan with pam 
    Layer 1: Spread both packs of cream cheese evenly onto bottom of pan
    Layer 2: In a seperate bowl mix together  cans of chicken, 2 cups of cheese, hot wing sauce, and ranch dressing. Pour mixture over cream cheese spread.
    Layer 3: Top with remaining 2 cups of cheese

    bake @ 350 for 20-25 minutes

    I usually bake for 20 minutes covered and then the final 5 uncovered.

    Emily, that's my favorite recipe!  Except I use blue cheese dressing instead of ranch, sharp cheddar instead of monterey jack, and I always use chopped up grilled chicken instead of canned (yuck)
