Tasty Tuesday: Carrots

So as we discussed before the holidays, we will feature one certain food for Tasty Tuesday. If you have any suggestions, please let me know!

Today's food is carrots. How do you integrate these into your meals? Any good recipes? Do you snack on carrots -- alone or with something to add to the taste?

  • I snack on carrots alone, and as a kid had a really weird habit lol... I dipped carrots in mustard! Not sure why, but I LOVED it lol haven't done that since I was like 13...
  • I will snack on carrots alone, plain.

    I also like to use them in stews and soups and chilis... yummmm.

  • My absolute favourite is when FI is roasting a chicken and puts carrots and potatoes in the roasting pan around it... Mmmmm
  • I love eating baby carrots by themselves.  FI and I used to eat them for lunch all the time.  We would sometimes eat them with spicy mustard.  I do love them in soups and stews and with roasts.  I have also steamed them and put butter and brown sugar on them. 

    Oh and if you like carrots in your soups or stews or with your roasts, try parsnips.  They are white carrots with a little different taste.

  • Ummm I love carrots. I like them raw but I also love them cooked in stews also! Or just maybe in a little butter. I will even eat them out of the can!!

  • I love raw carrots!  This has carrots in it, but this is one of my and FI's absolute favorite sides!  I think we make a big batch once a week and then eat it as a side every lunch and dinner till it runs out lol!  It is super simple too.  You will need 4 large carrots, peeled, 4 stalks of celery, a medium sized head of cauliflower, and a large head of broccolli.  Take all the vegetable and cut them into small chunks.  I learned that cauliflower actually breaks apart really easily so it is easir to cut it into big chunks and then just break it apart.  Combine all of the cut veggies in a big bowl and then drizzle with italian dressing.  Now I say drizzle, but you actually use a fairly good amount to cover the veggies.  They soak it up so start slow and taste as you go!  That is it and it is SO yummy!  Plus all the veggies stay raw and keep there nutritional value.  O and one other tip, the fancy italian dressing does not taste as good as the cheap-o stuff.  I bought a fancy bottle from Sprouts (similar to whole foods) and neither FI or I liked it.  The next time I got a bottle from walmart and boom it was delish!  Lol!

  • I don't usually snack on them, but if I do it's usually plain.  I like to cook them up and mash them like potatoes. I had some sauteed onion, butter and salt and pepper to them, too.  It's super tasty.  You can also cook up turnips and mash those in with the carrots.

  • I love raw carrots. If anything I'll dip them in hummus. My favorites are garlic or spicy hummus. For something different I'll make black bean hummus - same receipe as regular but swap chickpeas for black beans.

    For special occasions (because its not exactly healthy) I'll make glazed carrots - cooked carrots with a glaze of butter and brown sugar - yum
