I would suggest increasing the spacing a bit so that it doesn't look quite so scrunched, but I think it is ok to have the full description. It sounds tasty!
I think the full description is too crowded, but I would put more than just chicken and fish (for example, your first entree also had sausage, and if I wouldnt' have known that, could have picked it, even though I dont eat pork).
What about "Chicken with Italian Sausage and Fontina Cheese," "Roasted Top Sirloin in Garlic Pinot Noir Sauce," and "Filet of Sole with Scallop and Crab Meat Stuffing"
Those will also fit on 1 line each, giving you more room.

Thanks, it is a good idea to shorten the description. And the vegetarian, we don't have a choice. We get to choose 3 entrees and since there are not even a handfull of people who are vegetarian invited, we chose three non-vegetarian options and the venue will provide the vegetarian option of the chef's choice based on what is fresh locally at the time. It will most likely be an eggplant rollatini, but not guaranteed so I don't want to put something and it not be true.
And we had our tasting this past weekend, all the food was amazing, including the eggplant rollatini.
If I was you, I'd call the vegetarians and just confirm with them about their allergies. I'm allergic to eggplant, so if I was vegetarian and put down the vegetarian entree without knowing what was in it, I could get screwed either a) eating something I'm allergic to, or b) not having anything to eat at your wedding.
I know that isn't something you can control, because you said it's chef determined based on season, but at least if say, one of you vegetarians is allergic to eggplant (or anything else that may go in a veggie choice, for that matter) you can at least let the chef know so your vegetarian friend(s) won't go hungry.
ETA: Maybe on your RSVP card you could even put a line for allergies? So that people, even non-vegetarians, could write them in and you and your caterer/chef will be aware? That might be too much, but I just would hate to have anyone break out in hives or not be able to eat enough, you know? Or if you know all of your guests well enough and there are no allergies, nevermind any of this. =D
