Check! (and a little freak out - long)

So I'll start with the good. FI and I just got back from our cake consultation and we loved it! Even FI got a little excited! It's going to be three tier, really simple. Gorgeous! I took this photo in and we tweaked it a little:


The top tier will be more "normal" than the weird tall thing going on and the middle will be taller. We're doing a light pink sugar peony (like in the pic) and adding some green leaves and curly willow since there will be more blank space with the taller middle tier. The ribbon and lace around the bottom of bottom and top will be fondant so we won't have to worry about removing. It'll feed 92 and we're inviting 80 (expect about 65) so there will be plenty =) It was $345 which is only $45 over budget and I'm SO excited!!!! (Plus free delivery!)

Okay... now the crap of the day. FI used to work with a guy who did amazing food. He even won awards. So FI called him back in August-ish time and the guy said he could do it and do it in our budget. Well, I've been wanting FI to get in touch with him since Dec so we can start going over details and get a contract signed so I know we have a caterer locked down. He finally got to it about two weeks ago.

So he left a voicemail. But we haven't gotten a call back. FI said he's called him about two or three times since then and no anser, no return call. FI siad we might want to start looking for another caterer which is freaking me out. I mean, FI doesn't stress too much about these things so if he's coming to me and saying we should look for someone else, then that means he doesn't have too much hope. And our food budget is tiny. I mean, ou whole budget is tiny, but... yeah.

Plus we did our taxes and FI actually owed money and we were going to pay off my car to get him one (his truck stops working on a regular basis and his job requires him to drive around half of our state). So we're going to be out some money on that. Thankfully, his job has picked up for busy season but now he's getting sick and is miserable.

So if we could get some warm Knottie vibes that would be awesome. Mostly for FI though. I feel so bad for him. =(

  • Sending the vibes!  I'm sorry you're hitting a rough planning patch, but I love your cake ;)
  • Thank you!  I also meant to add the flavors! The whole outside frosting will be a really smooth buttercream. It's their "white chocolate", but it doesn't taste like chocolate really. The bottom tier will be almosd cake with a citrus buttercream filling, the middle will be chocolate cake with the same buttercream as the outside and the top will be chocolate with rasperberry filling. I also had a weepy moment on the way home because it hit me that we just chose our wedding cake. =P
  • Warm fuzzy thoughts with you!  I love your cake but, maybe to help yourself out, can you reduce the cost if you get less.  Not everyone eats cake so I've been told budgeting for 1 slice per person is even too much.  You have almost a slice and a half per person (unless you aren't using the top tier and saving for your 1st anniversary).  I would maybe go with a two tier for less to save yourself some money to put towards catering (or a car).  With the embellishments it will still look beautiful.  Just a suggestion though, don't want to ruin your cake excitement.  Hope you hear back from that caterer too!!!

  • I'm sure you could work it out with her.  I think we can make changes until 4 weeks before and pay/give headcount 2 weeks before???  It is totally what you are comfortable with.  With ours we are doing a small tier cake and then cupcakes.  We have 140 people expected though so we are bigger.  But where we are getting married, cupcakes are $3.50 a piece.  On our budget there is no way we can afford for seconds plus we were afraid of "hey they got two cupcakes why didn't I?" unless we had 2 for everyone.  So, we will be telling our venue when they pass out cupcakes NO ONE gets two under any circumstance.  Even if there are 20 leftover they are to be boxed up and given to us at the end of the night for us to do with as we choose (probably our late night drunk snack haha).  It sounds/feels kinda stingy but there will be one for everyone and it is all we can do.  We have a much larger wedding and cake may not be as expensive where you are but we are both budget brides so maybe that that helped.

    Maybe wait until you get the caterer figured out and the car and see if you need to cut back on cake.  I'd call you baker to find out when last changes have to be made and from there, see how everything else plays out so hopefully you can have your dream cake (and eat it too...sorry couldn't pass up the obvious corny line).
