meal planning for next week

is anyone participating?  I'm finishing up my grocery list for next week's meal plan.

tonight:  we're going out to eat (YAY!!)

tomorrow:  we're having leftovers for lunch (from this week's meals) and then I'm going to make a SkinnyTaste chicken/cheese/broccoli bake.  we'll have leftovers from that to snack on Sunday night and lunch on Monday.

Sunday:  lunch at my parents' house, dinner will be leftover casserole.

Monday:  green chicken enchiladas, ST yellow latin rice, frijoles rancheros

Tuesday:  ST skillet cajun flounder (but with tilapia, it's on sale), leftover rice, mini corn cobs or another veggie (we had them 2x this week, don't want to burn out).  also, probably a salad.

Wednesday:  confetti chicken pasta, roasted green beans (on sale for 77 cents a pound).

Thursday:  ST crockpot Santa Fe Chicken with leftover rice.

Friday:  we'll probably go out.

Saturday:  EveryDay Real Food crockpot corned beef and cabbage with potatoes.  for St. Patrick's Day, you know??  hope it's good.  :)

  • mmm!  I put down the Zuppa Toscana to use soon.  maybe next week!

the beef and Irish stew sounds wonderful too.
  • Tonight- I work, so I'm going to pack snack type things. A boiled egg, cucumbers, orange slices, carrots, grapes, cheese, and sliced meat.

Saturday + Sunday- I work again, so I'm going to make Tuna casserol since I didn't last week and take that for my dinners. Plus cut up veggies and fruit.

Monday- I finally work a day shift so I can make actual dinner! I'm going to make bbq chicken, steamed broccoli, and some type of side dish pasta.

Tuesday- BF finally comes home from work, so I'm planning to bbq a pork tenderloin, more broccoli, salad, and baked apples for after

Wed- Steak with blue cheese potatoes and salad

Thursday- Maybe tacos or fajitas, whatever I have the energy to make after work

Friday- I'm back to working the evening shift so it will just be little snack foods put together for a meal.

Saturday- Hopefully I'll get it off work and then we'll likely just pick something up on our drinking adventure.

I haven't been grocery shopping in about 2 weeks now, so I'm trying to just use what we have in the house in my attempt to save money on food.
  • I'm just trying to figure it out right now.  I'm home today so I need to take the time to get to the grocery store.  I only need meals for tonight, Sunday, and Monday.  Then I'm gone until Thursday and I think we have family dinner out that night.  I'll probably get something as a backup just in case we don't go out.  Off to search through recipes!!
  • Lunar, that Irish stout stew looks delicious!  I may have to see if we can't make that next week.  We're trying to get into meal planning, but not very good at it.
  • Coco: Can you just post your weekly meal plans and I can just copy them? I think they always sound so good, but I suck at organizing that kind of stuff. It seems like too much work, lol.

I did, however, organize my shopping list into weekly trips to try to save money though. I make sure to get different veggies, meats, fruits, etc. each week to keep variety and it's better than going to the store once a month and getting down to bare cupboards. I can also stick to the list and hopefully save some money. I've just started and already put $15 into savings because I didn't need to spend as much as I thought. I think it will help me stick to foods that we should buy rather than foods I love to buy but don't need (Nutella). I'm even sewing a little case to keep my lists and calculator in. Some day I hope to get into couponing and meal planning, but I'm taking baby steps, lol.

  • of course!  a couple coworkers actually pay for a service to plan their meals and write out their grocery list.  $50 a WEEK.  what??  I told them I could do that, PLUS tell them the local sales and coupons available.  it's weird, but I love meal planning.  it's fun for me.  I'd totally do it for you.  seriously.  :)
  • Ok, menu update:

Tonight:  Saucy Southwest Sandwiches (making double so FI has leftovers for tomorrow)

Saturday: Nada.  I'll be down the hill at work from 8 am to 8 am Sunday

Sunday: All in One Pork Chop Bake and a salad.  Got the recipe from Pinterest and I need something easy

Monday: our e-sesh is that day at 2:30-dusk so I wanted to throw something in the crockpot.  Trying another Pinterest recipes - Crock Pot Hawaiian BBQ Chicken and rice.  Gonna add veggies to it as well and there should be enough for FI to have leftovers Tuesday-Wednesday

Tuesday/Wednesday: Nada.  Down the hill fork work until Thursday

Thursday: Family dinner out (I think)

Friday: No idea.  Probably something simple - spaghetti & meatballs and a salad I guess

You should totally charge people like $20 a week to do that!! They would definitely do it! I wouldn't need you to come up with anything special for me. I can just copy what you are going to make for yourself for the week, lol. FI eats anything except hard boiled eggs, so he's easy to please and I think everything you make sounds so delicious. I told FI that I was going to copy you and eventually work on planning meals myself. He said it sounds awesome to him, lol.

Um some weeks our entire grocery bill is $50! (average is probably $60/wk). Unless they can get my weekly grocery bill under $10, not paying $50/week for meal planning. That is INSANE!<div>
</div><div>BF does our grocery shopping on Mondays and I usually don't make our menu/list until then, but I can play along</div><div>
</div><div>Friday- Mexican night- quesedillas and fresh strawberry margaritas (mine will be a virgin though, cuz I've been sick all week).</div><div>
</div><div>Saturday- fresh pasta (beef ravioli), with tomato sauce and sauteed veggies.</div><div>
    </div><div>Sunday- Pizza (home made)</div><div>
</div><div>Monday - I work late so no idea what BF will have, I'll be having left over pizza.</div><div>
    </div><div>Tuesday- stir fry</div><div>
    </div><div>Wednsday- leftover stir fry</div><div>
</div><div>Thursday - roast chicken and mashed potatoes (I have the day off so I am going to make a nice meal).</div><div>
    </div><div>Friday - going to a local italian restaurant for BF's friend's birthday.</div><div>

Awesome! I'll share something if I try it and it comes out good! I have a hard time with following recipes though. I like to substitute as I cook and taste and add and all that kinds of stuff. It usually works out pretty good, but then when I try to recommend someone else to try the recipe, they follow it as it's written and it might not be exactly what I cooked and then I feel bad if they make it and don't like it, lol.
