I have quite a few choices to pick from but not sure what would be the overall best choice for my guests. Need some advice.....
Chicken Oscar is a pan seared chicken breast topped with asparagus, crab and hollandise sauce.
chicken marsala- is a pan seared chicken breast topped with mushrooms in a sweet marsala wine sauce
chicken divian- is hand stuffed chicken with Broccoli & cheddar cheese
chicken cordon bleu- stuffed chicken with ham and swiss cheese finished with mournay sauce
Lemon Tarragon Chicken- pan seared breast of chicken topped with a light tarragon cream sauce
chicken chardonnay- breast of chicken filled with herbed cheese baked in puff pastry and finished with chardonnay sauce
I am not sure which one to choose because i know some guests have allergy to shellfish and some do not like cheese. any advice is appreciated.

Trust me. I drew up a chart for my guests' dislikes... until I realized that the only thing they'd all eat was air. SO not worth the worry.

Food allergies are definitely incredibly important to consider. I know two of my friends have severe reactions to shellfish and my mother has dairy and gluten allergies.

Will guests see the option in the RSVP?
I don't consider myself a picky eat, but would be upset if I got to the reception and was served chicken marsala, b/c I despise mushrooms. But if on the RSVP I had the option btwn chicken marsala and say filet mignon, then I'd know the obvious choice for me.
I know you can't accommodate everyone, but I do think that mushrooms are a common "hit or miss" food
From what you've listed, I'd choose:

Above would be my choice. We are having lightly breaded chicken with lemony cream sauce, which I love. Doesn't offend anyone's allergies, and it's delicious!

I can point out something that could be a potential issue with every single one of those dishes, and it's really just frustrating and futile to start thinking that way. As long as you give your guests more information than just 'chicken', and you do your best do accomodate allergies, I think they should be able to live with whatever you pick.

Agreed! If you're served something you don't like, put on your big girl pants and pick it off or eat around it.

If you're having only one entree (chicken), I think there are two ways to go about deciding:
1. Pick whichever YOU like the best. You'll never please everyone.
2. Go with the most neutral choice (the tarragon and lemon IMO) to please the most people.
If you are having other entree choices (beef, fish, vegetarian), I'd definitely go with whatever you like the best. If people don't like the chicken option, they can choose something else.
The place we are having the wedding at said to write on the invitations: chicken, beef, vegetarian. She said not to do any descriptions because they will tend to ask a lot of questions and sometimes you make up the invitations before you pick your final choice which in my case was true. I'm not concerned with the mushroom thing because they are so small the people that don't like them can pick them off but I know some people don't like the sauce. personally its one of my favorites but who knows everyone elses opinions. I'm surprised that your caterer recommended that. If you do get your reception cards printed before you finalize your meal decisions, I would have the information available somewhere, like a website or an insert in the invitation. I had to have my menu finalized before the invitations were sent out.
Say you picked the cordon bleu - people who don't eat pork might pick that entree if you only listed it as 'chicken'. It seems that you're accomodating the shellfish allergies, but if you were to pick a chicken dish that included shellfish, people with allergies wouldn't know to avoid it. I know it's not the end of the world to get to a wedding and not be able to eat the entree you're given, and of course if it happened to me I would be a gracious guest and not say anything, but I would leave early if I was hungry. I think it's just being a good host to let your guests know what the meal will be.
