DIY...without getting your hands dirty?
I want to create my own flowers, I want them completely custom, I know what I’m looking for but I haven’t found a florists yet that has anything close to what I want. I would just make them myself but I want fresh flowers and don’t want to be assembling bouquets a day before the wedding. I have no idea what options I have. Any Ideas?

Do you have a picture to show the florist to see if they can create what you want? Is is a matter that they can't or won't make what you want. I know often times florist want to create what they think you should have.
I'm a big DIY person so I'm DIYing the bouquets but it's a stress reliever for me and not a chore. I've done a practice run and have it down to about 20 min per bouquet.
If you can't find a florist I would suggest that you do a trial run on your bouquet and see if you; like it and feel you want to recreate it the day before.
If you cannot find a way to show or express your idea to your florist, then it will be hard for them to give you what you want. See if you can find some inspiration pictures. If not, can you draw? Maybe put your ideas down on paper, or make a mock up out of silk flowers.
You can DIY your flowers, but it helps a great deal to practice in advance with the type of flowers you will actually be using. It really helps if you have a little experience, have the right tools and supplies, and some reliable help.
Most fresh flowers can be done the day before, sometimes more, but you will have to keep them in water and keep them cool. And it's very time consuming, so if you're a beginner, allow twice as much time as you think you need, and plan nothing else that day.
But to DIY in advance, silk is probably the most practical, but just not quite as special.
Can you describe something like you have in mind?
Tuckerwed, it would help to know what you are looking for. However, www.costco.com has a floral link at the top, and some wedding packages that include bouquets, bouts and corsages, and some with centerpieces (not sure what you want). If they don't have exactly what you want, perhaps you can order them and insert additional flowers to make it more custom?

I haven't chosen a florist, but I have quite a few photos to show ... some illustrate size, some are for shape, some for a specific color, etc., and some just for "feel."
