  • OK, I can't cook to save my life, but my FI has been since he was a kid since his parents have owned restaurants for 40 years.  He makes this dish that I LOVE so I asked him to tell me how to do it so I can share it.  It's really low calorie and carb free so perfect for those of us wanting to lose before the big day.  I'm not good at even writing recipes so I just typed as he spoke.  Hopefully, it all makes sense :)

    Side note:  My kids love this dish as well (they've gotten so spoiled by his cooking and still love to remind me how I can't cook) Laughing


    Garlic Artichoke Chicken with Asparagus

    For 6 chicken breasts:

    Layer the bottom of a baking dish with olive oil, then lay the chicken breasts down.  Squeeze the juice of 3 lemons over the chicken.  Pour 3/4 cup of white wine over the chicken.  Sprinkle granulated garlic and salt over the chicken.  Peel a pod of garlic and cut them in half and toss them in.  Add a pat of butter on each breast.  Add a small can of black olives.  Add 2 cups of fresh sliced mushrooms.  Then add a large can of quartered artichoke hearts, drained.  Bake at 350 for an hour uncovered.  After 1 hour, lay fresh asparagus spears over the top and bake for another 10-15 minutes.

    I made this recipe on Monday and it was so good! FI loved it too.


    It was relatively inexpensive.  I got half a pound of tilapia for about $4.50, and the veggies didn't cost much at all.

    I will be making these next week to have for breakfast throughout the week, replacing the bacon with broccoli or spinach:

    Egg Casserole in Muffin cups

    • 12 slices of bacon cooked and cut into thirds
    • 6 eggs
    • 1/2 cup shredded jack cheese
    • 1/2 cup half and half
    • 1/4 teaspoon of salt
    • 1/4 teaspoon of pepper
    • 1/4 teaspoon Italian seasoning
    • extra cheese for the top

    Spray muffin tin with nonstick cooking spray. Place 3 bacon pieces in the bottom of each muffin cup. In a bowl, mix together all the ingredients except the extra cheese until well blended. Fill each muffin cup with 1/4 cup egg mixture. Sprinkle extra cheese on top.

     

    Bake for 20 to 25 minutes @350 degrees or until eggs are set.

    I have been really wanting to make the talapia tacos but I have been to lazy to get to the store and buy the stuff I need. They look goo though. I also want to try the skinny taste cajun chicken pasta. I actually sent her an e-mail requesting that recipe!
