Mac & Cheese Recipes?

I trust you b!tches more than Bobby Flay. Just sayin'.I'm talking real, bake-in-an-oven mac & cheese.If not a recipe, just the technique involved, and we'll get creative with the cheeses and pasta shapes. Evan just told me he "wants to get creative with mac & cheese."I don't know whether to be hungry or turned on.

  • I cook the pasta. Then, in the same pan, make a bechamel (white) sauce. It's a roux with milk or cream - specific proportions can be found in any basic cookbook or online, I'm sure. There's a good one in the BH&G. Add cheese to sauce. I prefer the sharpest cheddar I can find. Pour pasta into sauce. Pour whole shebang into a casserole dish and top with something that will end up crunchy and delicious - breadcrumbs and butter, more cheese, crushed crackers. Bake until top is toasty. Keep in mind that more sauce = creamier end product, and vice versa. You can also add all sorts of stuff - mac can be a good leftover user-upper when you have just a little bit of something in the fridge.

  • I think nicole posted about a mac & cheese recipe last week.
  • I'd go with Paula Deen's recipe, which you should be able to get from Food Network's website. H made mac & cheese with leeks, and I was less than impressed. I like to add bacon and tomatos to my m&c. Bonus points if you bake in the smaller corning ware (like the ones used for creme brulee). You can freeze these individual sized portions for later or take them to work.

  • A few suggestions:~add bacon~I use dry mustard in my mac n cheese, esp. with sharp cheddar.~egg helps hold it together.   • I take the box of Easy Mac, add water, microwave, and pour the cheese powder in. Still together and add some hot sauce. WALLA!
  • i've put crushed potato chips on top -- ruffles sour cream and onion.

  • Oh, and melted butter in w/ milk egg mix. I'd say... 1/4 stick

    I do what Bmom suggested.  For a main dish I do extra sauce and add turkey or ham and peas or broccoli.

    Another vote for Dharma's. I know I'm late and all, but it's GOOOOOOD and EASY.  I made it with some garlic cheddar once, and it was awesome.
