Veggies anyone?

A good friend does a booth at a farmer's market on weekends.  I was guilted into going, and I'm so happy I did.  I have tons of every fruit and veggie.  Just not sure what to do with everything!  I've been making fruit salads, smoothies, berry crisp pies, vegies in tomato sauce, roasted veggies, grilled veggies.I feel healthier than usual, but wow does all the fresh produce produce some gas!  Anyne have a favorite fruit or veggie recipe they want to share?

  • I was about to flip if this was about vegetarian weddings.  Thank goodness!I love veggies raw; I'm no help.  Enjoy, though!

  • Not exactly healthy, but I have an awesome recipe for fried green beans.    egg wash flour/italian seasoned bread crumbs mixture add whatever seasoning you like   batter and fry.   simple and delish!  Dip in ranch. 
  • -raw with hummus -Roast veggies and put them on a sandwich -check out vegweb.org, and under recipes you can search by specific vegetable. or you could always google by vegetable -cook down fruit to make a fantastic icecream or pancake topping. -see if you can eat raw for a day (I've always wanted to try) Don't forget to make sure you're eating fat and protein :)

  • Here are two of my favorites:Grilled corn on the cob: brush w/ olive oil, sea salt & herbs, grill until kernels start to brown.Grilled asparagus: toss w/ olive oil & lemon juice (fresh is best), sprinkle w/ sea salt, grill until tender.
  • Mmm. I paged mandy with a recipe for something we call chow chow, it's a spicy veggie mix that you can use as a topper for more veggies! I was telling her, you can put it on green beans, corn, black-eyed peas, anything you want to add a little kick to.

  • Bruschetta if you have tomatoes.  Or caprese salad.I like to marinate portabello mushrooms in a vinagrette dressing and grill.I'll do a grilled veggie salad.  Grill up tomato chunks, onions, mushrooms, pineapple, and whatever else you want.  Toss with an italian dressing.
  • I love asparagus, zucchini, and squash grilled. Zucchini bread is awesome too.I do a root vegetable mash in the fall - you use potatoes, carrots, and parsnips and make them just like you would make mashed potatoes. When I was in London I fell in love with mushy peas. I know it sounds a little weird, but it's basically mashed peas. You have to use fresh or frozen peas though, nothing out of a can.

There's a great one just about 1/2 mile from our house on Sundays. The fruits and veggies are so much better and fresher than from a store :)

  • This is my favorite pie recipie from the Pampered Chef: 1 Pie Shell baked according to package directions or homemade1 quart fresh strawberries, divided4 squares (1 oz. each) white chocolate for baking1 package (8oz.) light cream cheese, softened3/4 cup cold milk1 package (3.3oz) white chocolate instant pudding1 1/2 cups fresh blueberries, rinsed and drained1 cup thawed frozen light whipped topping Variations - Use Blueberry Pie Filling for the blueberries, add 1 cup Whipped Topping to the pudding mixture and decorate with 1 cup whipped topping and use vanilla or lemon pudding. 1. Prepare Pie Shell according to package directions and cool. 2. Rinse Strawberries and carefully pat dry on paper towels. Select 8 uniformly sized strawberries for garnish. Slice each strawberry in half using 3" paring Knife, leaving stems on each half. Set aside. Hull remaining strawberries and slice using Egg Slicer Plus. 3. Melt white chocolate in covered micro-cooker, uncovered on High 1 minute, stirring after each 10 sec. interval until chocolate is melted and smooth. Dip strawberry halves in melted chocolate; place in refrigerate until set. 4. Scrape remaining melted chocolate over bottom of prepared pie crust, spreading evenly to coat entire bottom and sides of crust. Layer sliced strawberries over bottom of crust. 5. Beat cream cheese in 2-QT. bowl with 10" whisk until smooth. Gradually beat in milk until well blended. Add pudding mix; beat until mixture begins to thicken. Spread mixture evenly over strawberries. 6. Arrange blueberries evenly over top of pie filling. Fill a decorator with whipped topping . Pipe rosettes evenly around edge of pie. Place dipped strawberry halves on whipped topping border. Refrigerate until ready to serve. Cut into slices.

I know it sounds a little weird, but it's basically mashed peas.A girl after my own heart!  aMrs and I had a convo about mushy peas on Friday night after I had some with my fish and chips.Other than that, I am pretty unoriginal when it comes to cooking so I have nothing to add on the veggie front.
  • I'm so jealous. I've never seen them on a menu anywhere in the states, not even at "authentic" english pubs. It's annoying. Fish & Chips must have a side of mushy peas, or it's not the real thing!

  • take butter and add some lime peel, lime juice, and red pepper flakes & brush over corn.. yummy.. I also like to cut up red potatoes and add spices to make roasted potatoes.. I take carrots, zuchinni, bell peppers, whatever I have and add some meat & make stir fry.. you can make kebabs, soup, add into a pasta salad.

  • Thanks for all the ideas!  Right now, FI is loving that I'm cooking every night.  However, I think by Thursday he's going to get fed up with the cornucopia of veggie dishes and fresh fruit desserts.Grilled peached are awesome, BTW.  I also did a simple grilled chicken breast with a black berry and raspberry reduction.  I just mashed the berries a little, mixed them with a little sugar, balsamic and let it reduce.  YUM.
