Our favorite is The Melting Pot.  They used to have a pasta fondu option which was vegetarian, and they might still.  But I would go even for the cheese fondu and salad (AND dessert!) because everything is so good.

I forgot to add that they usually do nice things for special events if you ask.  DH proposed at the MP and he told them ahead of time so they gave us the most secluded booth and included champagne after dessert.  It was awesome.

I love an Italian restaurant called Marcellino on Northern Ave about 16th Street.  It is delicious and they have lots of pasta that will meet your vegetarian needs.

I love the Landmark in Mesa. It's a historic church converted into a restaurant. They serve really good "old fashioned" food and they have an entire room devoted to their salad bar! I love historic buildings and since there are very few in Phoenix, this really tickles me.

My FI & I LOVE the Melting Pot too! We have gone there for our anniversary for the past 5 years. They really are accomodating b/c when you call to make the reservations they ask if you are celebrating something special & I always say our anniversary so they always have a card waiting at our table. & the last time we went in March (for our 7 years), after dinner, they brought us 2 glasses of complimentary champagne! It is a long process though, we are usually there for 2-2 1/2 hours. But it so romantic & fun! MMM now I am really craving fondue...

True Food Kitchen at Biltmore Fashion Park has amazing, amazing food at very reasonable prices!!!! The concept is healthy & organic food with vegetarian & gluten free options (pizzas, pastas, entres, salads, elixirs, etc). I went there last week for a fancy work luncheon & our entire staff was completely satisfied with their orders. Plus their dessert is so delicious & healthy at the same time, can you believe it? The ambiance is very hip, modern & a tad rustic. I love it so much that I'm dragging my fiance there Monday night after we meet with a photographer. Check it out, if not for your 1st anniversary, eventually. :o)

I am a little biased here, because I am friends with the Executive Chef, but I LOVE Elements at The Sanctuary.  They have the best views in town!  If you go there, let me know and I will talk to Beau (the chef) and have him do something special!

True Food Kitchen in the Biltmore or Fresh Mint in Scottsdale. If you are looking to do really high-end restaurant, call a few and ask if they will prepare something for you. (I am also vegetarian - vegan actually - and I know how hard it can be to eat at both ends of the spectrum. It can be hard to find tasty, well-prepared vegetarian food at both cheap and fancy places). Good luck!

Out of curiosity, what is the price range of True Food? I am always looking for good, gluten-free food. Unfortunately, I have to reckon with my student budget as well. :)
