1 can of Black beans 1 can of Kidney beans Canned whole tomatoes (28 oz.) Baby Carrots 1 chopped pepper (green, red, whatever you prefer) 1 chopped medium white onion Pre-Mushrooms Jalapeño (I use the entire pepper, but remove some of the seeds; we like spicy) Ground cumin Chili powder Garlic power Salt Pepper Boiled chicken breasts then shred         1.)    Bring pot of water to a boil, add 4 chicken breasts.  Should take about 20 minutes for chicken to be cooked all the way through.       2.)    Remove chicken and cool.  Once cool to handle, shred with hands/fork.  Season with cumin, chili, and garlic power to taste.      3.)    Add black beans, kidney beans, baby carrots, onion, pepper, and canned whole tomatoes plus juice to crock pot.  I squeeze the tomatoes in my hand before putting into the pot, this helps break them up during the cooking process.4.)    Add chicken and jalapeño.  Season with salt, pepper, chili, cumin, and garlic to taste.        5.)  Halfway through, add mushrooms.  If you add them too early, they will get soggy.6.)    Cook on low for 8-12 hours.  Serve alone, over rice or egg noodles.  Freezes very well.
