I just left that beautiful resort yesterday! It is incredible! We spent a lot of time by their nice pools and such. I recommend doing a helicopter or boat tour of the napali coast. I really liked the catamaran we did. The water was a bit rough but it made it more fun! The Beach House restaurant was a great view. Definitely try to get to dinner there so you can watch the sun set. Let me know if you have any more questions
We went to Kauai last September and stayed at Grand Hyatt. You will love the pool area! We took the trip to Naapali coast via boat, as PP said in another post-it is very choppy and one lady puked the whole time. I think it depends on what company you use. The crew is trying to get you there in back in a certain amount of time and they drive as fast as they need to to do so. DH and I were fine, but it was a bumpy ride. We also did the Smith Family Luau which was fun, great hula show at the end. We took a kayak/hike up the Wailua River with kayakkauai.com. This was a fun bonding experience, a little strenous but had a great waterfall in the end. If you like pan-asian food, check out Yum Cha which is next to Grand Hyatt at the golf clubhouse. Be sure to get a puka dog and some shave ice. Keoki's Paradise had good food with a cool outdoor setting and great live music-also close to Hyatt. If your package includes free breakfast as ours did, it's worth the trip to walk to the golf clubhouse. The food is better and you can order off the menu, no waiting. There are also some cute shops a few miles from the hotel in Poipu ans Old Koloa. People rave about the helicopter tours, but it is expensive and we chose to spend our money other ways. There is some great snorkeling right next to the hotel at Poipu beach.Hope this helps...sorry so long. E-mail me at cmc34@case.edu for pics

If you like to hike, drive all the way to the end of the road on the N. Shore and do the Kalalau trail. It's a little hard in places but the views of the Napali coast and mountains are amazing. It was 2 miles to the Hanakapai beach. Stop in Hanalei on the N. Shore for cute shops & restaurants. The N. shore is lush and very pretty, be sure to check it out!
The Hyatt is amazing! I was there last september and one of the highlights was seeing the Napali Coast. We took Capatain Andy's catamaran and went snorkeling along the Napali coast, it was breathtaking! We also drove up to Waimea Canyon. You can see a good view of the Canyon from I think the 8 mile marker, we did not drive the whole way. We made it to one major look out point and it was great, esp if you have never seen the Grand Canyon. We also drove to Wailua Falls, there is a look at point that is easily accessible. I would also highly recommend if you like snorkeling to rent equipment at Snorkel Bob's. It is only about $20 for the week and you can snorkel many places on the island. We just left the snorkel stuff in our car and broke it out at diff beaches throughout the week.
You are going to LOVE it. SOOOOO beautiful. I would recommend a helicopter tour. We used Jack Harter (no doors). My husband's still talking about it almost a year later. Also, the Beach House is an amazingly delicious restaurant with an even more amazing view of the sunset. Look up the sunset times for your stay on weather.com and try this restaurant around sunset. Everyone stops what they're doing and goes outside to watch the sunset and take pictures. So romantic! Oh to be there again!
The botanical garden is awesome. Kauai Visitor's Center has free lei making classes on Fridays, reservations required. Holoholo charters tour of the Napali coast/cliffs is great, too. We had a group of spinner dolphins riding the waves with our boat and doing flips right in front of us, it was amazing!
