I was going to make a salmon dinner this week but it was $10/pound at my supermarket. I hope the price comes down soon; I am craving it something awful.

I'm trying to find a way to make it "caveman approved" for BF's new diet. I'd have to cut out the black beans, but I think it would still be tasty with a bunch of vegetables.
I finally made it a week ago, and it was sooo tasty! I have to admit, I was a little skeptical when it called for putting pesto in a dish that had salsa as an ingredient, but the flavors mixed really well together.
sparkles - I know, right? I was like, I love pesto...I love salsa....but together?? No, it was absolutely perfect. I wish I had more culinary vocabulary words to describe it.

Sparkles, I loved the pesto, I really thought it made the dish. BF was skeptical at first, though, too. He asked "isn't pesto Italian? Italian plus Mexican...?" Funny. I wasn't feeling ambitious enough to make my own pesto this time, like bside suggested, but it was still yummy.
Cate, you should go for it! I think almost any veggie would work.
BF is still on the caveman diet. I'm on a "if you cook it, I'll eat it - but I might add cheese or salt" diet. He's being really sweet about it. But yeah, he's become a bit more moderate - allowing some dairy, which makes a big difference.
I'd have to make my own pesto (since pinenuts aren't allowed - but walnuts make a tasty pesto). And I'd do probably corn and a homemade salsa, and maybe even some homemade guacamole (sounds good, right?). I'll figure out a good combo.

Haha I attempted to make pesto once... it was by far the worst thing I had ever made. Although I think I made it wrong. Not sure how I managed that but it was extremely spicy (I guess that would be the best word to describe it.)

nik, what did you do to it?
I have the world's easiest pesto recipe if you want it, and I also can give you a recipe to make it with flatleaf parsley instead of basil.

A silly aside....there is a Mexican/Greek FAST FOOD restaurant here!!!!!!! It's an abomination to the awesome mexican food we have here, so much so that I am scared to get near it!
