Custom Menu?

So FI and I have our caterer booked and we are really excited about them because they come highly recommended. We aren't doing a tasting, mainly because because we live on the other side of the country, but also because we don't really see a point hahaha that's just us! Anyways, what our caterer offers in terms of food sounds and looks DELISH but we kind of want to keep in theme with our wedding so have thought about coming up with ideas for our own menu. Is anyone else doing this?
Our theme is carnival/country fair, here's what we have so far (and our wedding isn't formal OBV) and our caterer says she can do a BBQ buffet for us:
Corn on the Cob
Homemade mac & cheese
Hot Dogs
Mini Sliders
Shish Kebobs - chicken & veggie
Sweet Potatoe Fries w/dip
Deep Fried Pickles w/dip
Coleslaw
Tossed Salad
Dessert Buffet - cakes, pies, squares and cookies (and we have rented a popcorn machine and cotton candy machine)

 Thoughts? Am I missing anything? What would you like to see at a wedding with this theme?

  • Hmmmmm how to jazz up a hit dog....what about sausages?? Or is that still to laid back?? I do like the idea of the pulled chicken but unfortunately we were thinking about doing that for the rehearsal dinner hahaha. Decisions  Decisions!
  • I think even sausages would be better than a hot dog.  I know I love a good brat or sausage.  To me, hot dogs are super cheap summer food or kid food.  But if you love hot dogs, then don't let me stop you.  I do like the idea of sausages a lot better, though.
