Hungry Girl Nanner Bread

Has anyone made the hungry girl banana bread before?[url]http://www.hungry-girl.com/chew/chewdetails.php?isid=1343[/url]I have some overripe bananas to use up, and HOLYCRAPILOVEBANANABREAD but like everything that is good and delicious in life, it's bad for you. I love the nutritional info on this recipe, but I really hope it doesn't come out tasting like splenda flavored cardboard. If someone else has made it and has a review, or has another good low fat/low cal banana bread recipe, I'm all ears.

  • Thanks! I have no nuts in the house though, so that one might have to wait. Plus I'm leaning toward banana bread without any chocolate chips, nuts or raisins (ICK!) tainting it's pure banana-y goodness.
  • Mo, I feel that you and I are becoming kindred spirit. I'm going to make mine tonight-- so I'll report back on whatever recipe I make and let you know if it's yay or nay.

  • Really? I think I shall give it a try then. I only have quick oats, do you think that will be a problem? Also, I've never had oats in my banana bread before, what does it do to the texture?
  • Quick oats is fine. I didn't think it changed the texture. It just helped bulk it up. It is a very filling bread. A small piece kept me full until lunch.
  • My banana bread is now in the oven. I used whole wheat flour, and was a little more generous with the bananas and apple sauce. Also, I made homemade applesauce from scratch to use in it, I AM THE QUEEN OF DOMESTICITY. I'll let ya know how it turns out.
  • I give this bread a C as far as regular banana bread goes, but probably an A as far as "low fat/ low cal" goes. It's really nice and moist and has a good texture- but a little low on taste, and the crust is tougher and bland, not like the slightly crispy, crumbly deliciousness that my regular banana bread has. I'd probably make it again.
  • This is good information :) I'll probably still make it, even if it's just a C. I like a little SmartBalance on my BB. It's gotta be better than the WW meatloaf muffins I made last night. Unfortunately, I doubled the reciped because I thought it would be a smart move to freeze some of them for later consumption. They're not horrible, but another C. And like I said, I can freeze them, and pull them out as needed for lunches. Google Angie's meatloaf muffins, if you're curious.

It has FOUR bananas in one loaf of bread, so it's super moist, and the banana flavor is awesome. I don't think it tastes low fat at all. In fact, I don't even really like the taste of regular banana bread anymore.
  • Jens, I think next time you should make it using regular flour. I am just not a fan of all whole wheat flour. I usually do like half and half in recipes. It gives it a really weird texture and I cant seem to get baked goods to stay moist when using ww flour.
