Laughing Cow Cheese Recipes...

Anyone have any recipes that include laughing cow cheese? I have tons I got from costco and need to use it up before it goes bad.. plus, its a way to incorporate it into recipes.. or if anyone has any ideas I can try.. thanks.

  • I'm hoping to hear good recipes too! I just use it on turkey sandwiches and wraps. It takes the place of mayo AND cheese. Saves lots of calories. I also eat it on celery or wheat crackers for a snack. Sorry that's not creative at all lol.

  • I havent tried it on wraps yet but I think I might next week.. I ussually just use it on wheat thins or crackers.. hoping to see some creative recipes here..

  • Breakfast sandwiches. English muffin, some egg beaters and a wedge of laughing cow. I put it on celery as a snack. Hungry Girl LOVES the stuff and has TON of recipes. http://hungry-girl.com/week/weeklydetails.php?isid=1852
  • Chicken Cordon Blue: Pound the chicken out to thin piecesI use honey mustard to bread the chicken (instead of eggs)Then lay 1 piece of smoked turkey breast onto breadedchicken.  Take one piece of Laughing cow cheese and spread onto turkey breast.  Roll up and add tooth pick to hold inplace. Cook accordingly depending on the thickness of the chicken.

  • I put it on Melba toast and eat it with a green apple.  for some reason, i find it delicious!
  • Ingredients:4 Boneless, Skinless Chicken Breasts4 Laughing Cow Light Cheese WedgesCooking spray1/2 cup Breadcrumbsdash of dried Parsley Flakesdash of grated Parmesean CheeseDirections:Preheat oven to 400F.Lay each chicken breast flat on a cutting board. Cut a horizontal slice to create a pocket in the side of the chicken breast. Stuff the pocket with the cheese, don't skimp, it's good! Pat the chicken breasts dry with paper towel, and spray with cooking spray. Combine the breadcrumbs, parsley and parmesean, and sprinkle over both sides of the chicken breast.   • I mix it in with pasta for a cream sauce.  I also really like it on bagels.
  • Salmon with Cheese 1 piece of Salmon This amount depends on the size of the piece of salmon 2-3 triangles of Laughing Cow Light - herb or french onion (I usually use plain instead and mix with 2 cloves garlic and some fresh herbs)2 tbs fresh parsley 3-4 tbs of goat or feta cheese bread crumbs (I make my own with 2 slices of wheat bread in food processor)1 tbs butter Mix Laughing cow, goat cheese and parsley Make a slit in the salmon and spread cheese mixture in slit (most end up on top, just spread it out a bit)Mix bread crumbs with butter Sprinkle on top Bake at 350 until cooked to your preference of doneness
  • I made the Hungry Girl Fettuccine alfredo made with the laughing cow wedges (although I used whole wheat noodles instead of the tofu noodles). It turned out sooo yummy! I added some shrimp and broccoli. Yum!

  • Midnite- do you just add the LC Cheese to make the cream sauce or do you add other stuff too?
