  I have 2 ripe ones in my fruit bowl!We actually eat them plain with a little salt or olive oil and balsamic.

  I LOVE home make guacamole. Just add red onion, salt, pepper, cheese, a little lime juice, diced tomato and mash it together with the avocado. Yum!

  Thanks, ladies! These all sound delish! :-) Erica, I remembered you having some avocado recipes, but I know you're light years ahead of me in the kitchen! A few of those look pretty easy, though!

  Thanks, Erica! Glad you have faith in me! I made sloppy joe calzones last week that dh thought were going to be just awful. They actually turned out ok but he said it wasn't something he'd want again (I ask each time I make something new, since he's SO picky). P.S. I was totally going to add your lolcat as my siggy too! Changing siggy pics is a PITA for me, though. :-)

  They actually turned out ok but he said it wasn't something he'd want again (I ask each time I make something new, since he's SO picky).Ugh, Dori - my DH always says the same thing!  He is the primary cook in our house, but seeing as how he now has practice/games or classes 3-4 nights a week, it is getting harder and harder for him to cook, haha.  And we like SUCH different food.  Sigh.
