All food lovers! I need your HELP!!

Hello!
We pretty much have our dinner menu figured out, but we're struggling to narrow down what we'll have for the cocktail hour. We have around 350 guests and I will being creating the menu and prepping all the food (I'm a chef :) then a professional staff will be finishing everything on the day of the wedding.

So here is what I have so far:
Classic Shrimp Cocktail
Salmon Mousse in Cucumber Cups
Prosciutto wrapped Melon
Sausage stuffed Mushrooms
Water Chestnuts wrapped in Bacon
Risotto Truffles
Herb Cream Cheese stuffed Cherry Tomatoes
Mini Lamb Burgers
Grilled Lemon Chicken Skewers with Satay Dip
Fingerling Potatoes with Roasted Garlic Aioli
Greek Gazpacho shooter
Deviled Egg Trio: B.L.T, Lobster and Truffle
Apricots with Mascarpone and Pistachios
Watermelon Cubes with Aged Balsamic
Vegetable Spring Rolls with Chili Mayonnaise
Cheese stuffed Dates with Prosciutto
Baked Macaroni and Cheese Cupcakes

I KNOW THIS LIST IS RIDICULOUS RIGHT NOW! I'm trying to get it down to eight and still have lots of variety. Any suggestions welcome. Thanks!

    Mini Lamb Burgers
    Vegetable Spring Rolls with Chili Mayonnaise
    Deviled Egg Trio: B.L.T, Lobster and Truffle
    Grilled Lemon Chicken Skewers with Satay Dip
    Sausage stuffed Mushrooms
    Herb Cream Cheese stuffed Cherry Tomatoes
     My picks! & may I juss say it is unamerican to not love Cheese!

    First of all it sounds fabulous!

    Here are my suggestions:
    Make sure you keep enough vegetarian options.
    Look at what your main courses are.  For example, if you have a potato side I would do away with fingerling potato apps when you are triyng to eliminate options.

    With that being said, here are the ones that sound best to me:
    Prosciutto wrapped melon.
    Risotto Truffles.
    Chicken skewers.
    Baked mac and cheese.
    Vegetable spring rolls. 
    Those sound like they would be my favorites, but I am not a vegetarian and I don't eat seafood.

    I agree with these picks.  Perhaps change one of the meat items with a veggie one to help those non-meat eaters. But it all sounds wonderful.  Especially the Herb Cream cheese stuffed Cherry tomatoes.

    If I had to pick just 8, I would go for:
    Classic Shrimp Cocktail
    Risotto Truffles
    Herb Cream Cheese stuffed Cherry Tomatoes

    With these choices you seem to get a variety. Plus these are the ones I'd personally chose to eat. GL!

    I would personally stay away from things with dips, but thats just me because Im a bit of a germaphobe and unless I get my own little cup of dip I wouldn't want to use the communal one. The ones I think sound good are

    Salmon Mousse in Cucumber Cups
