For the groom & groomsmen, should I have them wear only a boutonniere? Would adding a pocket square be over kill?

Yes, it's overkill. Men wear either a pocket square OR a bout, not both.

Pick one or the other, but both is definitely overkill.

I would stick with just the boutonniere. You can have their vests and ties in your colors and that would be enough.
