Must have chicken option for dinner?

I'm conflicted.  I know chicken is considered a "safe" option because most guests will eat chicken.  But, during our tasting we didn't enjoy the chicken we tried (mostly because of the sauce) but LOVED the salmon and the beef tenderloin.  We really want to make these our options, but I'm wondering is that selfish?  Should we be concerned if there is a person or two who might not like either red meat or fish or should we go with the dishes that we love? (There is a vegetarian option, which I guess can be a last resort for those who don't like beef or fish).

    Just go with the salmon and beef if that's what you think tastes the best. It's not rude in the least.

    I think beef, salmon, and vegetarian are plenty of choices. 

    No matter what you choose, you cannot pick everyone's absolute favorite thing.  You just need to please most of your guests, and I think that with those three choices (all tasting yummy!) will.

    I think beef and salmon is fine. If I didn't like the chicken at the food tasting I wouldn't serve it either. So go for it. I don't think its selfish at all.

    I think beef/chicken/veg options are good and most everyone should be able to find something they like.

    see if they can do a chicken breast stuffed with crab meat and get the best of both worlds?  Chicken can also be over rated,in America we probably east it a few times a week.  Make the menu your own and what you think tastes the best.

    I hope it's not rude because there's no chicken on my menu!  

    Haha, seriously though, most people will be fine with beef or salmon.  And if you could offer a vegetarian option (lasagna, pasta, etc.) to all guests as well that ought to have you covered. =)

    I love chicken.  DH says I eat it so often he is surprised I'm not growing feathers....

    Even so, there was no chicken on my wedding menu.   We had beef and crab cake.    I do not think you have to have chicken to be safe.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

    We skipped over chicken on our menu too.  The beef & fish options were just that much better.  Plus we have a veg. option as well.  So if someone doesn't eat beef, they still have 2 other options to choose from.  I'll do my best to accomodate people, but I can't please everyone!

    You can eat chicken at home. Laughing  No need for it at your wedding if you don't want it.

    FI and I chose Ham & Sirloin Beef.  We have 4 or 5 side dishes/salads for any vegetarians to choose from...it will all be served buffet style.

    Absolutely you don't have to have chicken! If you weren't wowed by the chicken, but you were by the beef and salmon, then your guests will likely feel the same way. I've always hated the dreaded "wedding chicken", chicken is not something that keeps well in a hotbox or chaffer - it tends to dry out, so most caters try to cover it with some sort of sauce. For our Oct wedding, we're doing whole roast pig (it started as a joke, but everyone really liked the idea) and beef tenderloin plus an undetermined vegetarian option.
