Cupcake Tips

Anyone have any tips for making cupcakes.  Do I still need to grease the pan or are the paper cups sufficient?  Thanks

    Paper cups are fine. I fill the cups with a pastry bag or a ziplock with the corner cut off. Make sure not to cut too much off the corner though, especially if the batter is thin.

    The paper cups alone will be fine.  Just don't put in too much batter or when they rise in the oven they will overflow and get stuck to the top of the pan (which isn't a tragedy but it can be a pain to get them out of the pan).

    when i frost them, i prefer to use the big, giant tips to get tops that look like the bakery. i use 804, 864 and 846. i pipe in a continuous loop for a lot of frosting, and just pipe giant dots for slightly less frosting.

    I fill with an ice cream scoop, standard size. Works well for me.
