I'm not a local gal but we tried the Bellagio Buffet when we were in Vegas in Sept and it was wonderful.  I would highly reccomend it.  They were carving Kobe Beef that was sooo good and also had a variety of seafood and lots of other stuff.  I have had Spice Market for lunch but not dinner and I would say Bellagio is better.  Just my opinion.

I second the Bellagio. I also had Spice Market for lunch and while it was ok it didn't compare to Bellagio. The MGM one SUCKED! Food was limited, organization was bad etc...On other trips I liked Treasure Island and the Rio Seafood Buffet.

I'm not local but we always eat at buffets in Vegas when we holiday there.  The best one in my opinion by far is the Bellagio followed by the Wynn.  My sister went to the Village Buffet at Paris and said that was just as good as the Bellagio.  We also have tried the MGM, Golden Nugget, Palms, Treasure Island and Rio and none of these are half as good as the Bellagio and Wynn. I have heard that the M Resort off strip (15 min drive by Mandalay Bay) does a really good buffet and alcohol can be included within the package.  May be an option as this wasy you could head there if you are planning on a strip tour to the Vegas sign or whatever.  It's a lovely hotel and we had lunch here and thought it was really nice.

My MOH lives in Vegas.  Her and the locals highly recommend The M buffet or the one at Red Rock Casino.  We are doing our Dinner at The M because beer/wine is included in the price ($25/pp) and it is a seafood buffet on Saturday night.

For a strip buffet I vote Paris! Spice Market is good, but not that nice and also very popular (we're talking lines) and there are better places on the strip.
