menu hallllpsssss

Ah! So I need to throw a last minute dinner together for between 4-6 people for H's birthday tomorrow. He has requested a pulled slow cooker chicken I make and then put in wheat wraps with fruit salsa. I am going with this mexican theme I guess...

What else can I make? The guests are my ILs and MIL and SIL are both dieters. The chicken isn't terribly fattening so I don't think that's an issue. I am thinking a salad on the side... and maybe corn? I would do corn bread but no one would eat it.

For an appetizer- I am thinking plain old veggies and dip.

Ice Cream cake for dessert (yes my H is 5 inside)

Is this too lame?

  • I think something with a little spice would be nice.

    I've made THIS corn salsa before and actually just used it as a salad.  It's pretty healthy and might make a nice addition.

    I use this at my get togethers...it's also good on fajitas or wraps.

    It's a good, low cal dip too.


    EDIT: If black beans aren't your thing, you can substitute black eyes peas, or do a mix of both.

Maybe mix in the corn you were planning on having with some some bell peppers, onions, zucchini, and tomato. You can dress the roasted vegetables with a little salt, lime, sesame oil and some taco spice seasoning.  Then people can eat it as a side or make a strictly vegetarian wrap if they don't want the chicken.

    Instead of veggies and dip, maybe chips and salsa to follow the mexican theme?

    I second the corn salsa. 

    ETA: I am doing a slow cooker pulled chicken tonight, coincidentally, but I am doing bbq.  It's also my H favorite.
  • Mix a brick of softened cream cheese (you can do the reduced fat kind) with a jar of salsa (any kind) for a nice dip (for chips or veggies) or as a spread for the wraps.  We call it 'pink stuff'.

  • applesauce with italian seasoning as a dip is delicious. I always serve that when having the IL's over.

    How could I forget guac and margaritas?! idiot.

    I have to skip any salsa with corn- I can't eat it. The corn on the cob I am making will sadly be enjoyed without me (this makes me angry).

    AATB- how any recipe? That sounds yum!!!!

    Also- for those that suggested spice- the chicken is really spicy but I am also making a non spice version for my MIL...

  • My sister made an awesome cucumber salad Memorial Day weekend. It was very cool and refreshing. Something like that might be good.

  • If you're sticking with the theme, I personally love stuffed jalapenos. Or seven-layer dip. Pretty simple.

    Also, I often make this side dish with Mexican food - mix black beans, green onions, red onions, tomato (corn, but since you can't, skip it), diced jalapeno, garlic, cilantro and lime juice together and cook over low heat. Yum.
