Wedding Buffet

These are my choices for my wedding buffet:

-Salad, with two dressing choices
-Rolls
-Salmon with a sauce
-Herb encrusted chicken
-Whipped sweet potatoes
-Green beans

They may take as much as they want, they can have both entrees and both sides, etc. Are these enough choices? I am being told that we need to have more side options. What do you guys think? TIA

I was going to suggest more sides... not everyone likes sweet potatoes and green beans, and if they don't like either then they're stuck with meat and salad. I would suggest one other veggie and some kind of pasta salad or something.

I think what you have is fine and it all sounds delicious. More sides would be nice, but not needed. :)

I agree about another side or two, but to be honest, I'm quite certain Satan has something to do with the creation of sweet potatoes.

add a carb like rice, or something outside the sweet potatoe mashed.  Maybe a garlic mashed if you want to be different.  Salmon is something people either love or hate and you may want something more neutral as a seafood item I would suggest a white fish like talipia/ stuffed Filet of sole or jumbo shrimp.  A beef or pork may be better then fish too for picky eaters.

To dress up your bread rolls, consider an artisan bread, bread sticks, hummus, infused olive oils and spreads.  It is an inexpensive and fun way to add to rolls and butter that you can have any day of the week.  Remember two things make a party - FOOD and Entertainment!

like PP said, i would DEFINITELY add a pasta option. or at least regular whipped potatoes. is there anyway the green beans could be a mix vegetable medly?

I think a pasta option would be a great idea, especially if there are going to be any vegetarians there.  also, i too would consider replacing the salmon with a white fish.

I think a rice pilaf and a grilled or raosted mixed veggie item would complete the menu perfectly!
