Anything good going on in the kitchen this week?

I would like to do a chicken chili.  Anyone got any good recipes for that?

  • Just eating leftovers from the Black Bean Chicken I made last week.  I think I'm making spaghetti tonight, and I have stuff to make black eyed peas and ham this weekend.

  • I made a smoky grilled salmon for myself yesterday and steak for FI (with a mushroom rice pilaf and steamed broccoli.)

    Later this week I have pan seared scallops to make one day and turkey burgers for another
  • Two Words: Short Ribs.  The temperature has finally dropped in Cincinnati, so I don't mind having the oven on for longer periods of time.  I braise my ribs in red wine, garlic, a little brown sugar, shallots and tomatoes.  They completely fall apart and are just gorgeous on a cold day.

    I'm a little too excited.  This is what a steady diet of chicken and mixed greens does to a woman.

    I don't have a chicken chili recipe, Cathy. When I have used chicken - I just throw it in instead of ground beef. Not very exciting ;)

    I made stew last night. I browned my stew meat in merlot, added a bit of flour - I like a thick hearty stew. Then threw in the other stuff. I made cornbread out of a package, and thought to myself I am realllllllly getting lazy! It was good, and we will probably have leftovers tonight. I have thawed out turkey sausage to make pizza, but I don't think I will have time

  • I am doing a juice fast.  Tonight's dinner will be beet greens, carrott, apple, ginger - juiced.

  • I didn't eat supper last night... my stomach has been upset
    and had a yogurt for breakfast... fighting to keep that down, so lunch and supper don't sound promising...

    however I DO HAVE To still work... the smell of fresh doughnuts should fill me up lmao

    supper NOT sure... boys will probably have chicken nuggets, and soup for me... (Maybe) ... maybe just some crackers...  will probably crock pot some stew for tomorrow though.

  • I made a chicken chilli a few weeks ago in the slow cooker, and it was pretty good. Ground chicken breast, skinless boneless chicken thighs, a little bit of stock, canned chopped green chiles, onions, garlic, and yellow pepper, with lots of spices (I just eye-balled it). It turned out yummy!

    Tonight I'm using the slow cooker again and making vegetable soup. FI gets a grilled cheese with it because tuxes are more forgiving than wedding dresses. ;)

    My FI got a short rib grilled cheese last night when we had a spontaneous dinner date. I was so jealous I nearly snatched it out of his hand.  Though, he did give me the best bite of his sandwich.  It really is the little things. Hopefully you can spare a couple calories and sneak a bite.  :)

  • We're having leftover homemade pizza tonight.  The rest of the week I have no idea.  We'll probably try some crockpot meals (got one at the shower this weekend - I'm fully ok with having to buy another one if the weddingdoesn't happen).  My coworker gave me a crockpot recipe for Thai pork and it looks delicious. 
  • Monday (yesterday) - cajun blue cheese burgers, roasted potatoes, broccoli
    Tuesday - stuffed shells with chunky marinara
    Wednesday - marinated grilled chicken, tuna macaroni salad, carrots
    Thursday - crockpot chicken enchilada soup and cornbread
    Friday - FI has a gig, so we'll probably eat there before he plays
    Saturday - we'll be out of town for my HS friend's wedding
    Sunday - whatever is easy after traveling back home!
