We didn't have the luau for the rehearsal, but we still sent our families while we were having some vendor meetings.  If you call ahead to reserve, they will set aside a table for you so you can all sit together.  It's a fun activity, but you might find it hard to find a consistent quiet time for things like toasts or thanking your families.  However, there's usually food time well before performance time so if you front-loaded those activities, you could be fine.

At the luau that we went to (at the Wailea Marriott) there was a good 2 hours between the time that doors opened and when the show started.

We're not technically having a rehearsal, but are hosting a luau get-togehter the night before the wedding at the Old Lahaina Luau. If you have a party of 15 or more you have to call for reservations. We are staying in West Maui and I checked out the reviews for a few of the luaus on tripadvisor any yelp and picked this one based on what I thought was the best fit for us. It is just under $100/person and includes dinner (buffet), unlimited drinks (with and without alcohol), and the show (no fire dancers though, which was fine with us). My FI made the reservation so I don't know all of the details, but I believe he said it was assigned seating and the sooner you book the better seats you will get. They have table seating and mat seating which is a little clloser to the stage. I heard the view there is also really nice.

Some of the others I had read about in West Maui were The Feast at Lele, Drums of the Pacific Luau, and Royal Lahaina Luau. And I heard of the one at the Grand Wailea and Wailea Marriott in South Maui. Good luck!

I think it's a great idea (we did one as a post-wedding activity with the Old Lahaina Luau). As long as you're doing it less to focus on speeches and toasts, it's a fun option. I think we had about 5 minutes with our guests when we managed to get everyone sitting in their seats so we could say a few things, so as long as you're not hoping for more than that, go wild, I sez.
