Easter Menu

What's on your menu?

I'm making:
Boar's Head Ham
Mashed Potatoes
Fresh Green Beans
Biscuits

I need an appetizer or another side- any ideas? I'm cooking for 7. TIA!

    I doubt this will help you, but Easter is always at my parents' house and every year we have:
    - ham
    - lamb (we're Greek)
    - lasagna (we're Italian)
    - mashed potatoes and gravy
    - corn
    - green beans
    - yams that are either candied or baked (only when sister requests them)

    Just thought of this... what about a nice and light salad as an app?  Maybe something with spinach and strawberries?  I have a recipe for a strawberry salad that's delicious, but it includes pine nuts and sunflower seed oil, so you have to be careful about allergies.

    How about a baked bree for an app Sherri?  You can get the puff pastery in the grocery store along with the bree.  If you add some fruit and nuts on top it will be delicious!

    I was going to suggest scalloped potatoes, but you already have mashed potatoes.

    Asparagus, mashed turnips, applesauce or cranberry sauce, sliced and grilled zucchini or squash, corn

    If you need dessert ideas, I'm making s Pineapple cake (yellow cake mix, mixed with 1 can of crushed pineapple in juice), topped with lowfat cream cheese frosting, and sprinkled with coconut.

    There were a couple interesting appetizer recipes on pillsbury I saw.  One was Tropical Crab Rangoon and Roast Beef Bruschetta.  Check out their web-site, they have lots of ideas.

    I'm 100% Italian and I have no clue what Pizzagaine is...? We probably call it something else though.. what is it??

    Also..its interesting that many of you suggest or are making deviled eggs... my family only ever makes/eats deviled eggs at bbq's with burgers and hotdogs, and we've never had them at a holiday type dinner... its interesting to see how everyone does things so differently..

    We ALWAYS have deviled eggs on Easter...I think it started as a way to use the dyed eggs!
