Reduced fat cheeses?

The chocolate chip cookie post made me think of this...

What does everyone think about reduced fat cheeses? Are the okay, bad or good to use?

  • The more I get into learning about my food, the more I'm trying to make "cleaner" food choices.  So for me, now, I'd rather have a smaller portion of full fat cheese than more of a reduced fat cheese, because, really, what are they using instead of fat?

  • Most reduced fat cheese just replace whole milk with 2% milk or skim, this is how the fat gets removed.  This is my understanding. 

  • I don't like the reduced fat cheeses -- they don't quite melt or taste right.  However, I always buy the 2% milk cheese whenever it is an option.  Tastes the same (to me, anyway) and doesn't have any weird stuff in it.

    My thought process about cheese is that its delicious. I generally fall short on my fat intake for the day unless I eat a lot of nuts, so I always choose full fat cheese and just dont use a lot. I just use very sharp cheddar to get more bang for my buck in the flavour department.
  • I really like Cabot's 50% less fat white cheddar.  I always get part-skim or 2% cheese.  Laughing cow wedges are pretty good and there will be new flavors ina couple months that I'm really excited about.  I get full fat cheese when it has a lot of flavor so I won't need as much-blue cheese, parmesan for example.  I eat a lot of creamy goat cheese because it's already low in calories and fat and is really good on everything and as pasta sauce (IMO).

  • I always go for 2% milk cheese.  Full fat cheese seems to really kill my digestion, like throw off my entire system for days.  I think 2% is more gentle to my tummy, so that's why I get it.  Also, I think it tastes the same.

    IMHO, though, fat free cheese is disgusting.
  • Just make sure you check the sodium levels.  I was buying fat free cottage cheese until I realized that the calorie level per serving was about the same but sodium in the FF version was through the roof.

  • Fat free cheese is terrible. I usually buy full fat unless it's shredded, in which case I might get 2%.
  • I also like 2% and 1% cheese. Fat free, however, tastes gross and chemically to me.

    However, I will often opt for full-fat cheese if it is hormone and antibiotic-free.
