NWR: stuffing

I don't know how I"ve gone this long without making Thanksgiving food.. but I have to make stuffing for FIs Thanksgiving. I've been looking on line and there are a million recipes. What do you do? Any tricks?

    I don't have a recipe to share, but I know my mom skips the celery that is in most recipes and uses celery salt instead, because we're a weird family when it comes to food textures.  (Or sometimes she uses it but cooks it first so it's softers.)

    My family doesn't do stuffing as in stuffing it in the turkey, we do dressing, here is our recipe:

    4 packs of cornbread mix-( I use Martha Whites)- Mix and bake according to package.

    10 or more dropped biscuits- ( I use Pioneer Baking Mix, there is a recipe on the back on how to make.)

    Make your breads a day or 2 ahead and crumble them up to dry out.

    1 1/2 cups chopped celery

    1 large onion chopped

    Saute this in 1 stick of butter

    In large bowl with the crumbled bread add the sauted veggies then add 4 boiled eggs chopped

    add 1 can cream of chicken soup

    1 Tbsp- sage or more (to taste)

    2 tsp poultry seasoning or more (to taste)

    salt & pepper to taste

    Then start adding a good chicken stock stirring it all together until it's moist.

    Taste and add more spices if needed ( some people like it green)

    Pour into baking pan and bake at 350 until brown and bubbly.

    I buy a bag at Kroger and mix it with chicken broth. And lotsa butter. I'm lazy when it comes to the stuffing

    ha ha we use the stovetop stuffing!  It's just a box mix but you can't beat it!

    foodnetwork.com has a ton and you can search by dressing/stuffing then find one that has ingredients that look good to you.

    I use the Pepperidge Farm stuffing mix in the bag and add sauteed celery and onion with chicken broth (according to the recipe on the back) and its sooo good! WAY better than StoveTop in my opinion.  I use 2 bags on Thanksgiving so there is some leftover after stuffing the bird to put in the oven to cook by itself.

    I have to say for this kind of cooking, I always turn to Paula Dean.  She has some of the best 'home cooking' recipies, but they are completely absent of 'healthy cooking'.  There are only a few days out of the year that I can justify going all out like that.  Thanksgiving is definitely one of them.  I'm sure her stuffing is delicious!

    I have been on Food Network's site all weekend.  I may be biting off more than I can chew.  Literally.  It seems like pretty much all of the recipes follow the same basic format so I am just going to use my same dressing recipes from the last time I made it.

    I'm thinking of making my own turkey stock to use in my dressing--does anyone think this is worth it or should I just open a can of chicken broth?

    I tried making my own chicken stock and it didn't come out so great.  For me, I would treat this like DIY wedding projects.  At a certain time you have to cut them off and do what's easy.  So I would buy the chicken stock just in case and then try the turkey stock.  If the turkey does not work out, you have back up!

    My dads mom has a stick up her tush when it comes to home made food.  She will turn her nose up at store bought things.  Dressing for the cole slaw?  Comes from a bottle but she does not know this and she LOVES it.  They just toss the bottle.  One year my step mother made dressing from the Stove Top box.  Grandmother LOVED it and still does not know it's from a box.   

    One year my other grandmother made dressing with sausage.  At first it was weird to me because I'm so used to blah dressing with nothing crazy going on but now I crave it.  Haven't had it in years.

    Allrecipes.com is my main go to.

    Courtski, I was considering that recipe.  Even though it will mean yet another trip to the store, I might go ahead and try it!
