cake serving

At my wedding reception venue, they told me the way they traditionally serve cake is that after they cut it, they place it at every guest's place setting instead of at a common table.  There are two flavors so they just put one than the other and people can trade if they don't like what they got.  They do it while everyone is dancing and also put carafes of hot coffee at the tables too.  People come to their table when they feel like it to eat their piece of cake.  They do this because they only make the amount of cake for each guest to have one piece.
I really don't know how I feel about this.  I think I would prefer to have all the cake just placed at one table and people can come and choose what they want themselves.  Which do you think would be better?
Pros of it being at their seat:Everybody is guaranteed a piece because the venue only makes enough for each person to have one piece.
Cons:People might not be willing to trade so they won't get the flavor they want
If someone doesn't want their piece, other people won't be able to get seconds and that cake will be wasted in the trash because people won't be rude enough to steal cake from someone else's place setting.

I think I'd prefer it to be just at one table so we could get seconds and choose our flavor but the venue lady seemed to think that was not a good choice.  What do you guys think?

I think it could work at a common table. Like you said, not everyone will want their piece. I've also heard that a lot of people take the cake cutting as a sign that the wedding is winding down, and leave about that time (not sure how accurate that is, but that's what I've heard), so they may set a piece of cake at a seat where the person has already left, too. I think it could work either way.

I agree with putting the cake on one table: then, the cake won't be wasted if there is extra (someone else might like it). You can choose your own piece, and I think most people would rather do that.

It's your wedding, so don't be afraid to tell them what you really want!

we're having three flavors and having it at a common table so they could come and pick their own-we're sorta having unconventional flavors so I want to make sure people at least can have a choice

I like the common table idea - whats the point of having more than one flavor is people can't pick? if it is just placed on their table, people might not even notice that the person next to them has a different flavor, they might just assume they're all the same.
