  I don't have any recs for you, but I just have to say that Pachelbel works just fine on an organ!  Not trying to change your mind - violin and guitar will be lovely, it's certainly a softer sound than an organ.  But the organ can give you majesty in a way other instruments can't.  Just my two cents.
  
  ETA:  just thought of a resource, the Rutgers Concert Bureau office, which can connect you with whatever musicians you need.

  Can you ask your church's music director for recommendations? That's what we did and he hooked us up with our violinist and she was $250.
  I also am coming down the aisle to Pachelbel. If you youtube Canon in D Organ, you can get a feel of how it sounds.

  go to a local high school and ask the orchestra or jazz band director there if there's a talented student there willing/able to do it.

  I'll check out youtube and see how it sounds on the organ.  Maybe I'll surprise myself haha.  I just generally do not care for the sound of an organ but maybe it just depends on the music being played.

  Check out the Royal Strings.  I looked into them for my wedding but they weren't willing to travel down to the Jersey Shore just for my ceremony.

  Check out Vogue Music Events.  Their string quartet played at our wedding but they have a variety of ensembles.
