Croquembouche in S. Orange County, CA

I'm looking for a baker who makes the french Croquembouche, aka Piece Montee. My fiance is from France and we are having a lot of french influences throughout our wedding.  I cannot find a baker who makes this "cake", yet I see so many people around the country who have had it done (and you would think in California I would find someone.)

You might want to try posting this on your local board (look in the left menu for "Local Wedding Boards").

Yea, definitely try out your local. Any decent catering company should be able to do it. They're very simple, much easier than a tiered wedding cake. Also be careful throwing around the word piece montee to a US caterer. In France it's usually assumed to be Croquembouche but here in the states it usually means some type of non-edible decoration, at least that's what I would assume if a bride asked me to make a piece montee for her wedding.

I'd yelp it, that's how I found places that made it in SF.  However, it turns out H doesn't love cream puffs, so croquembouche went out the window.  :(
