Tipping-No gratuity charges

The Poughkeepsie Grand does not include gratuity charges.  What would you suggest giving to the waitstaff and bartenders?

    When we got married there, their package  included some sort of gratuity.  On top of that we did $300 to our consultant and then some other amount $200 maybe (I honestly don't remember) to our specific waitress.  
    We did not tip the bartenders that I remember, there was something in our contract about $100 per bartender or they could put out the tip jars, we just let them put out the tip jars.

    This may be a stupid question, but we have gratuity included in all our prices for the venue, and included for the limos. How much more should we give on top if any? I know we are going to tip the wedding planner at the venue because she has just been GREAT to us and I am a pain she has rewritten that contract like 3 times because we keep changing things and the FI insists on having the contract resigned. When it comes to the rest of the wait staff I do not know what we should do about them.
