What's for dinner?

Have no idea what to make for dinner tonight.  Help a gal and throw some suggestions out.  (And no...I don't care if it has meat or dairy in the recipe...I'll use substitutions if need be.)  Thanks!

  • Saute some oil and garlic on medium heat
    Throw in a handful of chopped onions - Saute until near translucent
    Add in a can of mushrooms (or fresh if you have them)
    Add in a 10 oz bag of spinach (yum!)
    Saute until spinach is wilted
    Season w/ salt & pepper
    Poor entire concotion over pasta
    Enjoy!!!

  • This is my favorite lazy recipe, it makes enough topping for 4 chicken breasts.

    Preheat oven to 400 degrees.

    Mix together:
    1/3 c. flour
    1 tbsp paprika
    1 tbsp seasoned salt
    1/8 cup parmesan

    Melt 4 tbsp butter or margarine in a 13x9" metal pan. Coat chicken with mixture on both sides. Dip top side of each chicken breast in melted butter and flip over in pan. Sprinkle additional topping on chicken and cook 30-40 minutes.

    I usually serve this with baked potatoes or corn bread and snap peas.

  • I'm making chicken tacos with trader joe's cajun black beans, corn, and salsa with a side salad.  mmmmmmm can't wait!
  • Trader joes Soy Chorizo, black beans, add any veggies you want, onions, peppers tomatoes. you can add rice into it too to make tacos. I usually put them in a wrap :) yum My FI likes it with cheese and sour cream!  You can add other beans too if you like! I like garbanzo!

  • cdream05 stole my idea. :) Chop an onion, brown it in a drizzle of olive oil, and add a can of drained black beans and 2t of ground cumin (and a shake of chili powder if you like it hot). Heat it up and then put it in wraps with chopped fresh veggies and mashed avocado.

    Homemade salsa/pico de gallo: chop a tomato, a sweet red pepper, and an onion, mix in some minced garlic and maybe fresh cilantro, and let it sit in the fridge for a couple of hours so that the flavours blend.
