Re: Cookie recipes

  • Sugar cookies will always be my holiday cookie.
  • I make flourless PB cookies.  They're always a huge hit (the best and easiest PB cookies I've ever had/made).

1 cup PB, 1 cup sugar, 1 egg, 1tbspish (I just kind of dump) vanilla.  Bake for about 10-15 minutes at 350.  Makes about 10-12 good sized cookies.  Make sure you cover tightly when they're all cooked and hanging out waiting to be eaten or they get crumbly.

I know they're not very holiday-like, but I get requests for them every christmas, without fail.

  • Last year I made pretzel turtles

You need: pretzels, rolos, pecans and white chocolate

put pretzels on a baking sheet, put rolos on top, bake for 3-5 minutes at 350 so the rolos melt.  Squish a pecan onto the rolo, then drizzle with white chocolate.

  • I'm with Any on the sugar cookies... and I always have to decorate them very obnoxiously.

I always enjoy my grandma's ethnic treats on the holidays; lefse, krumkake, etc.

You know what is awesome are peanut butter cup cookies.  And they are SO easy.  You just buy peanut butter cookie mix and whip that shiit up, then you put the dough into a mini-muffin tin (spray with Pam first, of course, so they don't stick) then before you bake them, you stick an unwrapped little peanut butter cup in the middle of it.  Those are awesome either cooled, or fresh out of the oven.

    And... I'm hungry now.  Awesome.

  • We make peppermint bark.  So easy and always a huge hit.

Melt dark chocolate or a half bag or so of chocolate chips in the microwave or a double boiler; spread in a thin layer on wax paper on a cookie sheet and chill or freeze.

Crush up a bunch of candy canes and set aside.

Then melt white chocolate (about 50% more than the dark chocolate - this should be the thicker layer; the dark chocolate shoudl be the thinner layer), let cool slightly so it doesn't melt the dark chocolate when you pour it over the dark chocolate.  After the white chocolate is spread over the dark chocolate layer, sprinkle the crushed candy canes over the white chocolate and chill until firm; break into pieces.
  • I do a ton of baking for the holidays. NS, I just posted the rolo/pretzel thing a couple of weeks ago.  I love those things.

    Cream Cheese Squares

    2 tubes refrigerated crescent rolls
2 - 8 oz. blocks softened cream cheese
    1 cup sugar
    1 tsp. vanilla
    3/4 cup melted butter
    3/4 cup sugar
    2 tbsp. cinnamon

Pat out one of the tubes of rolls into bottom of large  glass baking dish 11 x 14 or larger.  Beat softened cream cheese, 1 cup sugar and vanilla until combined and smooth over rolls.  Spread second tube of rolls on top of cream cheese mixture.  Combine melted butter, 3/4 cup sugar and cinnamon and pour over 2nd layer of rolls.  Bake at 350 degrees for 30-40 minutes.  Serve warm or cold, cut into squares.

(If you use the perforated sheets of crescent rolls, make sure you close up the perforations.)

  • My go to cookies are ginger snaps...however my mom keeps the recipe closely guarded and I don't have a copy.  I need to work on that - they are to die for but she calls "tradition" of us making them together....which I don't mind, but really I think it's to keep the recipe on lock down.

I always make Betty Crocker's butter spritz cookies, since they remind me of cookies my grandmother would have made back in the 1950s: http://www.bettycrocker.com/recipes/the-ultimate-spritz/aa68df04-bd64-4f1b-8421-0df82064bca4

I also love this PB Cookie recipe, which I'll be making for my office Christmas party in a couple weeks: http://www.culinaryconcoctionsbypeabody.com/2007/07/21/smile-for-the-camera/
