As I’ve mentioned in some of my posts before my BF works with a college football team. His team has done relatively well this season and so he has to go to a bowl game with them. Sadly the Bowl game he is going to is on the 28th of December. Due to pre-game practices and everything, he is going to have to leave the 23rd to go to the bowl site and therefore missing Christmas. This is his favorite holiday and you can only imagine how bummed he is about not spending it with his family.
So I have devised a plan to make him an early Christmas:
I am stopping by his apartment for the night on my way home tomorrow and have secretly planned to have an early Christmas meal. (He thinks I am going to make my chili he loves so much when I get there, but I already made it and froze it for him for another day) I have a little bit of decorations to throw up in his apartment and countless hours of festive music but my problem is the meal.
I was looking for an easy chicken recipe, and I stumbled upon Engagement Chicken (<-click it for link). So I am planning to make that. (It will be good for a laugh later, but it sounds really easy and tasty) Question for you domestic divas on the recipe, it calls for a rack, and neither my BF or I have a rack, do you think it would be ok if I just did the same process in a deep pan? Then my biggest problem is side dishes, I have some pre-made dressing and mashed potatoes but I don’t know what else would be quick and easy and most important Holiday/Christmas-sy.

I don't have a rack either and it's never been a problem. If you want to, they sell them pretty cheap at the grocery store or Bed Bath & Beyond.
Call his Mom to see what she used to make for Christmas. I've found what people term "Christmasy" is closely linked to what they had as a child. One thing we love is mulled wine, or anything pepperminty!

Is it? I am a totally a noob to the board, but I don't honestly think it will have magical power that will put him in a trance and make him propose, I just am amused with the name. GREAT idea with calling his mom, I will definately call her when I know she's home. (we 're tight like that, lol)

Sorry if that sounds snippy ... I'm KUI. I dropped the cork in my bottle of white zin that I'm using to make chicken piccata (which is seasoned with salt, pepper and lemon juice! ZOMG!) and I thought it might help if I drank some. I don't know why I thought that would help.

I should preface this by saying that I am a total cooking noob, my forte is desserts and candies. This was my first time tackling an entire chicken and no matter how much you Google something you are not an expert for what happens in real life chicken cooking wars…
On Friday, I drove down to see my BF on the way home for Christmas. I had gotten a rack (its awesome btw, thank you for talking me into buying one), and called his mom, I found out she only ever makes breakfast casseroles for Christmas so I got the stuff to make one of those too. I got to BFs apartment at 5 and preceded to speed decorate his dining area while I had the chicken soaking in warm water. (I had to freeze it and so I had been letting it thaw all day on the drive/while I was in exams) He called me to say he was on his way back home, so I started messing with the chicken. It took him 30 minutes to get home and I was STILL fighting with this chicken. He came in the door and I had to keep him away from the kitchen/dining room finally I talked him into getting a shower to leave me to my chicken war. Finally I gave up and begged him to come help me get the junk out of the cavity. After he tried to get it out also, he tells me its too frozen on the inside to get it open. So, we left satan’s chicken to thaw more and ate at the melting pot instead. There we had a lot of entertainment because the people across from us were on a first date and the girl was getting totally hammered, and steadily more sloppy of a drunk. I was still kinda down that I had a “chicken fail” but he assured me he thought it was cute and he wouldn’t tell anyone I was a noob. When we got back to the apartment we fought with the chicken again as a team, with an excessive amount of laughing and a big highfive/chest bump when it finally got into the oven. At 11 we gave up on it ever browning entirely and pulled it out. The breast was done but the legs had more to go so we tried a little bit of it (still don’t see the hype of it all) and threw it in the fridge. He finished baking it yesterday, and raved about it being great, and he was impressed that I had his mom’s casserole for him the next morning before work so it wasn’t all lost.

Also, Wrkn, my mind is also usually in the gutter. We once had a poster called "blueboxbride" or something similar, which was SUPPOSED to be about Tiffany's. But instead I always associated her with blue ladyparts, like female blue balls? And then I had to explain to Narwhal that "box" was a euphemism for ladyparts, and I felt like a perv.
In short, I thorougly enjoy this thread for all the memories and for getting the phrase satan's chicken stuck in my brain. Win!
