This has been the biggest DIY problem item on my list so far! We are having a Citrus themed wedding, colors are yellow, orange and green. I decided with my theme, I didn't want a champagne toast, but instead, a Limoncello toast. The "traditional" recipe calls for Everclear and takes at least 3 months to make. So in November I made two batches with Everclear, zesting 40 some lemons, yada-yada-yada, only to find that despite all my sanitizing efforts one batch molded when I took them out to filter, three months later! Yuck, mold, dumped it down the drain.
So I gave up. I decided we would toast with champagne, because one batch was not enough for all of our guests.
My parents (being somewhat of drinkers, lol) didn't understand why I couldn't just make another batch! After all that work?! I was discouraged, thats why! I didn't want to stand there for hours zesting more lemons, and I didn't have anymore Everclear (we had to get it when we were in N.C. because they don't sell it in PA)
So... recently as the wedding got closer, I was sad about not having enough Limoncello for our toast, and I mentioned to my mom that I would make more, with vodka this time, if I had help. So she promised to help, and she bought the vodka, and was supposed to come over. Well I called and she answered, out to dinner! She forgot! I was so mad, but stood forever in my kitchen that night and made my Limoncello and then made lemonade with the extra lemons, by myself, lol!
So anyway, my Limoncello is all done and bottled, and now we have enough for our toast, and I am so happy again.
