What's something healthy I can make for dinner tonight?

Title says it all... I'm trying to stay away from carbs so does anyone have any good low-carb meals I can make for dinner?

  • I'm doing what my niece calls "asian chicken" (because at age 10 she thinks soy sauce = asian 100%) It's just chicken breasts marinaded with soy sauce, garlic, white wine, salt, pepper.  I'm grilling them and then doing a side of steamed broccoli and grilled corn on the cob
Though I also just looked back through my MFP dinners for the last ten days or so, and breakfast for dinner had the lowest carb count at 11 - that was with a big veggie scramble dish and a bacon side.  The carbs were all from veggies and the eggs.
Ooooo breakfest for dinner I like it...

  • tonight were having java rubbed chicken (spice from Wildtree) over spinach with sauteed zucchini.
One of my favorite no carb suppers is zucchinni, bell peppers, mushrooms, carrots and eggplant  sautted in grapeseed oil with spaghetti sauce and a little cheese over the top! When FI wants spaghetti this is what I have.

As much as I love beans they will actually sabotage your body-fat loss more than sweet potatoes.

  • one of my favorite summer meals are simple chicken salads.  grill up some chicken adding some spices or rubs to whatever flavor you want, cut it into small pieces, and throw it into a fresh salad!  You can make it a more traditional souvlaki by adding in onions, tomatoes and feta, or you can make up your own garden salad with chopped up broccoli, peppers, avocado, chick peas, etc. whatever you want!  I typically use spinach leaves as the salad base instead of iceberg or romaine lettuce.

it's a perfect meal for hot days, since it's fairly light and doesnt sit like a rock in your stomach...pair with some fresh fruit with yogurt for dessert =)
